Any good Sausage recipe ideas?

Yesterday my store had Bob Evans sausage in a roll for $1.00.
Use by 10/29/11, which is why it is so cheap.
So anyone have any good bulk sausage recipes?
With bacon prices skyrocketing, suasage may be a cheaper alternative.

In Wisconsin--
1 lb. bulk sausage, crumbled, browned and drained.
1 lb. sauerkraut
1/2-3/4 cup chopped onion
4 cups mashed potatoes
1/2 cup parmesan cheese

Layer in casserole in order given.
Bake at 350 degrees about 45 minutes, or until top is golden brown.
 
1 pound sausage
1 (10 ounce) can diced tomatoes with green chile peppers
2 (8 ounce) packages cream cheese, softened
Directions
In a large skillet, cook sausage over a medium heat until it is browned and cooked through.
Mix tomatoes and cream cheese into the skillet. Stir and continue cooking the mixture over a medium heat until the cheese has melted.
 
When I cooked a lot I used sausage instead of ground beef for spaghetti sauce & also added to a box of rice-a-roni for 'dirty rice'. You can always freeze and at Christmas make sausage ball apps. We like sausage gravy for breakfast.
 
Breakfast burritos!
Browned sausage with whatever your family likes, eggs, cheese , sausage
salsa, hash browns etc... Wrap in flour torilla
Serve them for dinner
or Wrap them and freeze
A minute or two in the microwave makes a nice portable hot breakfast


Also quiche (freezes well too)
Pie crust
eggs, milk , sauteed onions and cheese -yum

Can also use in lasagna or spaghetti sauce
 

Sausage & Cream Cheese Breakfast casserole
I make this a lot for breakfast

*1 lbs. sausage
*1 8 oz. package cream cheese
*2 cans of crescent rolls (I use the reduced fat ones because they don't have trans fats in them)
*shredded cheddar cheese
*1 onion
*salt & pepper

In a 9 X 13 pan grease the bottom and unroll one of the cans of crescent rolls, leaving them attached. Mince the onion and cook with the sausage. Drain. Mix together with cream cheese and salt and pepper. Spread mixture over uncooked crescent rolls. Open the other can of crescent rolls, and roll out over the top of the mixture (keeping the crescent rolls intact as one sheet). Bake in a preheated 350 degree oven until the top is golden brown. A few minutes before you take it out of the oven, sprinkle with shredded cheddar cheese.

Sausage Wonton Appetizers

*1 lbs. sausage
*bunch of spring onions
*1-2 cups. shredded cheddar cheese (depending how much cheese you like)
*1 diced red/green pepper
*anything else you like (i.e. olives, jalapeno peppers, etc.)
*package of wontons (took me forever to find them, they were in the produce section in my store)
*salt & pepper

Cook sausage and drain. Spray or grease the bottoms of a muffin tin. Place a wonton in each muffin hole, allowing the wonton to rise up the sides (making a cup, essentially). In a 350 degree preheated oven, bake wontons for 5-10 minutes until they are slightly brown. Meanwhile, cook sausage and drain. Mix with the other chopped ingredients (I prefer uncooked peppers/spring onions, but you could saute them before mixing with the sausage, if you prefer), including the cheese. Place a spoonful of mixture in each pre-cooked wonton shell. Bake for another 5-10 minutes, until the cheese is melted and it's bubbly. These are great as they are, but you can also top with chopped chives or sour cream. My aunt makes these for Christmas Eve and they go fast!
 
Biscuits and gravy, breakfast burritos....Sub for anything you would use hamburger in.
 
Once the sausage is cooked it can be frozen. So many many options there brown like hamburger drain put it on cookie sheet freeze it then when frozen put it bag this allows you to be able to take as much out as needed handful or the whole bag without it being in 1 big glob.

Fry sausage patties individually wrap then put in bag can use as many as you want.
 
crumbled cooked sausage is delicious in bread, you can use pizza dough, add anything your family likes, mozzarella, peppers and onions, etc. Roll out dough, Roll up your ingredients, crimp the edges of dough with a fork (turn over a little edge then crimp) , bake at 350 in oven and you can use a drop of the sausage drippings to brush onto the dough to brown it 1/2 way thru YUMMY. I think its like 30 min, but just take a peek and when nice and brown, its done (sausage already cooked) you can slice thick when cooled and even freeze some (I use wax paper then heavy foil, then in a freezer bag, and never get freezer burn. Then I thro in over to heat when we want some yummy warm delicious sausage breads..

NeverlandClub23, your Sausage Wonton Appetizers reminded me of one I knew and haven't seen or thought about for a few years.
It is pretty much the same as yours, using biscuits instead of wontons.
When tubes of biscuits used to go on sale real cheap at the grocery store, it was a good use of them.

Easy Sausage Cups
Spray or grease cupcake pan.
Put a biscuit in each cupcake hole and shape into a cup.
Fill with crumbled, browned, and drained sausage, diced green onion, and chopped red pepper if the price is okay.
Top with some shredded pepperjack cheese.
Bake in 375 oven until biscuit cup is lightly browned and cheese melted.
Serve immediately---they cool fast, and aren't as tasty lukewarm.
 
Sausage Balls

2 c baking mix (Bisquick)
8 oz shredded cheddar cheese
1 lb pork sausage, uncooked

Mix all ingredients together in a large bowl. Roll into 1-inch balls. Bake at 400° until cooked thoroughly.

You can also roll these into balls and freeze them (uncooked) to use later. I usually take them out of the freezer the night before and place them on a baking sheet. Then I just have to pop them into the oven the next morning.

A quick, yummy breakfast, especially when it's cold outside!
 
I make this for our Sunday morning Bible Study group and there are never any leftovers!

Sausage Egg & Cheese Roll

1 1-lb loaf of frozen bread dough, thawed overnight in fridge
5-6 eggs
2 cups cheddar cheese
1/2 lb cooked pork sausage

Preheat the oven to 350 degrees. Roll out the dough into a large rectangle on a greased baking sheet. Crack the eggs into a bowl, reserving one egg white in a separate bowl. Scramble the eggs. Put the sausage in a large skillet and add the eggs, and cook until done. Place a layer of cheddar cheese down the center of the bread dough, lengthwise, and top with the hot egg/sausage mixture, and top with more cheese. Roll up the sides of the bread dough around the mixture, making a tight seam. Flip over on the baking sheet and brush with the reserved egg white. Bake 20 minutes or until golden brown. Slice with a serrated knife and serve.
