It’s nearly warm chili time again - and there are sooo many Walt’s Chili recipes around. i really want to try making it this year (especially appreciate any healthy or easy prep hints)! Not sure I ever found it in the Parks last year :( Pleae share a link or a recipe if you have a suggestion? Side dish ideas are appreciated too! Thanks!!

I make a fall chili that even my picky eaters like! In the crockpot add
rotissierie chicken pulled off bone
2 cups mirepoix
2 cups chicken broth
2 cans rotelle
2 cans white northern beans rinsed and drained
1 diced large sweet onion
1 diced butternut squash-btw I use this to thicken it and sneak in veggies my hubby has no idea
1 can mild diced chilies
1 tsp cumin
1/2 tsp chili
serve over rice with doll sour cream,shredded cheddar and fresh cilantro.
its also nice with corn bread
 
I saved this recipe that I found a while back. I have not tried it and do not know if it is the real Walt Disney's favorite recipe.

WALT DISNEY'S CHILI

Ingredients:


1 lb. dried pinto beans
2 white onions, chopped
1/4 cup vegetable oil
1 cup celery, chopped
2 garlic cloves, finely chopped
2 lbs. lean ground beef
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon thyme
1-2 jalapenos, chopped
1 (28-ounce) can diced tomatoes
salt and pepper, to taste
saltine crackers, optional

Directions:

Sort and soak pinto beans in cold water overnight.
Drain water. Place beans into a large pot. Add in chopped onions. Pour in enough water so that it comes up 2-inches above beans. Cover with lid and heat on medium-low for 2 hours until beans are tender.
Pour vegetable oil into a second large pot. Add in celery and garlic. Heat on medium for 5-6 minutes until tender. Add in ground beef and cook until browned, crumbling the meat with a spatula or spoon.
When meat has browned, add in seasonings and jalapenos. Pour in can of tomatoes. Salt and pepper to taste. Stir well. Reduce heat to medium-low and cook covered for 1 hour.
After beans have cooked for 2 hours, drain water. Pour beans into meat mixture. Salt and pepper again and stir well to combine. Cover with lid and cook for an additional 30 minutes.


Ladle into bowls, top with cheddar cheese, and serve with a side of saltines.

Chili Just Like Walt Disney Used to Eat​

Walt’s own recipe for this family favorite!
So wrap yourself up under your favorite blanket, slot in your favorite Disney movie and relax with the perfect comfort food—Walt style!

INGREDIENTS

Chili

2 lbs. coarse ground beef
2 onions, sliced
2 cloves garlic
1⁄2 cup oil
1 cup chopped celery
1 tsp. chili powder (depending on taste)
1 tsp. paprika
1 tsp. dry mustard
1 large can solid pack tomatoes
2 lbs. dry pink beans
Salt

For Extra Zest
Add a pinch of the following spices:
1 little yellow Mexican chili pepper
Coriander seeds
Turmeric
Chili seeds
Cumin seeds
Fennel seeds
Cloves
Cinnamon
Dry ginger

PREPARATION
Soak beans overnight in cold water. Drain, add water to cover (2 inches over beans), and simmer with onions until tender (about 4 hours). Meanwhile, prepare sauce by browning meat and minced garlic in oil. Add remaining ingredients, and simmer for 1 hour. When beans are tender, add sauce to beans and simmer for 1⁄2 hour. Serves 6 to 8.
