Since you've got family and friends pitching in with the preparations, I urge you to make sure their contributions are recognized. They're a gift to the couple, so please mention them in the thank you cards.
For my niece's wedding, we assigned out most of the shopping, telling folks how much we had in the budget for each item. We nicely let them know that if they had to/wanted to exceed that amount, we'd love to consider it as their wedding present to the couple. We set up a small sign on the gift table acknowledging the donors' gifts - both of time and money (eg, church flowers - Mrs. A; table decorations MS. B; reception tableware - Mr. C)
Guests told us that they liked giving money towards a specific item for the wedding or reception, rather than a check for "whatever". Since the couple both had their own apartments, they had plenty of household items, so didn't need many traditional wedding gifts.
