1. How long can eggs sit out unrefrigerated before they're no longer able to be eaten?

2. How do you store your eggs in the fridge so that the colors don't run together or rub off from condensation??

Eggs don't have to be refrigerated. It only aids in preserving the A quality. After a week on the counter, the the grade will drop faster than if it's in the fridge. And the quality of an egg is graded by how high the yoke stands and how firm the whites are. Not really by taste or how bad the egg is.

No one ever got sick at my house growing up and the eggs stayed out till Easter was over.
 
Are Easter eggs safe?
Sometimes eggs are decorated, used as decorations, and hunted at Easter. Here are some safety tips for Easter eggs.
Dyeing eggs: After hard cooking eggs, dye them and return them to the refrigerator within 2 hours. If eggs are to be eaten, use a food-safe coloring. As with all foods, persons dyeing the eggs should wash their hands before handling the eggs.

Hunting Eggs: We do not recommend using hard cooked eggs that have been lying on the ground, because they can pick up bacteria, especially if the shells are cracked. If the shells crack, bacteria could contaminate the inside. Eggs should be hidden in places that are protected from dirt, moisture, pets, and other sources of bacteria. The total time for hiding and hunting eggs should not exceed 2 hours. The "found" eggs must be washed, re-refrigerated and eaten within 7 days of cooking.

Storing of hard-cooked (boiled) eggs:

Refrigeration is necessary for hard boiled eggs if the eggs are not to be consumed within a few hours.
It is preferable not to peel your eggs until you are ready to eat or use in your recipe. Hard-cooked eggs in the shell can be refrigerated up to one week.

Peeled hard boiled eggs can be stored in the refrigerator in a bowl of cold water to cover for about 1 week (change the water daily) - or in a sealed container without water (cover the eggs with damp paper towels) for the same length of time.

SAFETY NOTE: It is not safe to leave hard boiled eggs (including those in their shells) out at room temperature for long. If they have been taken to a picnic, or served on a buffet, keep them cool while they are being served, and discard the leftovers.
