Since we are finally having a sunny, warm day here, I thought maybe someone else might be interested in this great salad. This makes a great, light summer meal. It goes over really well here! I put off making this recipe for a long time. It seemed really labor intensive to me when I first looked at it. It really wasn't as bad as I thought it would be & well worth the effort if you enjoy salads. It's been posted before, but for those who haven't seen it, this is the reduced version as the original was for like 50 people . . . .

DURBAN SPICED ROAST CHICKEN SALAD
from Boma’s at DAKL

~5 oz Mixed Greens
1 cup Durban Roasted Chicken
~2½ c Chili Cilantro Dressing
1 1/8 tsp Ground Cinnamon, toasted
1 1/8 tsp Ground Cumin, toasted
1 1/8 tsp Ground Coriander, toasted
1 1/8 tsp Ground Cloves, toasted
2 Tortillas cut in strips & fried for garnish
[NOTE: I haven't messed with toasting the spices & still love it! Also, I don't "fry" the tortillas. I layer them on a cookie sheet & spray with olive oil, sprinkle with salt & then bake at 400 until lightly brown.]

DURBAN BASTE for roasting chicken
2½ Tbl Olive Oil
~ ½ Onion, ground fine
2½ Tbl Garlic, ground fine
2½ Tbl Ginger, ground fine
3 tsp Lemon Juice
½ cup Yogurt, plain
1/3 cup Durban Spice Mix (below)
Blend all ingredients. Rub prepared chicken well & marinate for 24 hours. Rotisserie or oven roast cook for 2 ½ - 3 hours.
[NOTE: I've done it in the crockpot when it's hot out.]

DURBAN SPICE (enough for one chicken)
2 Tbl Paprika
2 Tbl Annatto Seeds
2 Tbl Salt
3 Tbl Coriander
1 Tbl Turmeric
1 Tbl Cumin
1 tsp Cloves
1 tsp Nutmeg
1 tsp Cinnamon
1 tsp Black Pepper
Grind (or buy ground) fine all spices. Mix & store in tight covered container.

CHILI CILANTRO VINAIGRETTE
1½ Jalapeno
½ c Honey
½ c Rice Vinegar
½ c Safflower Oil
¼ c Lime Juice, fresh squeezed
1 c Cilantro, chopped
Dash Pepper
Blend all the ingredients until smooth except the cilantro. Make sure there are no large pieces of jalapeno. Add the chopped cilantro, check the flavors & adjust seasonings, if needed.
[NOTE: If you're like me & never have all the "right ingredients"...you can substitute red wine vinegar, olive oil for the rice & safflower. Also, I don't use Jalapenos - I just use 1/8 tsp Tabasco sauce to give it kick.]

I've been to Boma's three times now, but I don't think I've ever had this dish. It sounds really yummy though. Thanks for posting the recipe. :D
