Question: What to do in the morning @ MK?

DW and I will be going to WDW for our 25th wedding anniversary, without kids this time. We have 5 days park hopper tickets and the focus is on RotR and some of our favorite rides. There is no need to see and do as much as possible. Not huge fans of lounging by the pool. Shopping is for later in the week. For our wedding anniversary date, we have 11:30 AM res at Be Our Guest. I tried to get a dinner time, but that was the only time I could get. We also booked two Capture Your Moment sessions from 1:30-2:30 PM for some photos around the Castle and hopefully the Haunted Mansion (DW's favorite ride). We don't care for sleeping in. No need to resort hop as we have stayed in some of them before. I suppose we can go to the park and just take it easy and people watch until our lunch at BoG. But, what other unique or fun things you would recommend to do in those first few hours at MK for two adults?

Walk slowly down Main Street and look up at the names of people and their titles and/or businesses on the windows on the 2nd and 3rd stories. Google them to find out more about them. Go through the standby queues for attractions you'd usually FP or skip and look for hidden Mickeys (e.g. Little Mermaid) or enjoy the entertainments built in (e.g. the special effects in the Peter Pan queue) while you let people behind you go ahead.
 
Consider getting your silhouettes done on Main Street? Ride the Liberty Bell, go to Tom Sawyer’s Island
 
If haunted mansion is her favorite ride, don’t you have to go ride that?

how about wander around the grounds at the grand Floridian and Polynesian if open?
 

Soon after MK opens there will be a horse drawn wagon from the train station to the castle. I always like to hop onboard for the first ride of the day.
 
I'm sort of confused by the question, because the answer to what can I do at MK in 2 hours is literally anything at MK. Right now, wait times for rides at MK are maxing out at about 90 minutes, and that is just the absolute maximum--you'll probably find that most headliners are around 45-60 minutes, and most everything else is 30 mins or less. Since your DH likes haunted mansion, go ride that! Multiple times perhaps!

The Haunted Mansion gift shop, Memento Mori, used to do a thing where they would take a photo of you and digitally transform it so that it looks like you're a ghost/skeleton from the ride. Not sure that is still a thing.

I know you have a big lunch, but MK has some yummy breakfast options. Sleepy Hollow waffles, Cheshire Cat tails, tots at Friar's Nook etc. Heck, I've been known to have a mid-morning dole whip now and then ;)

If you just want to sit for a bit and not do rides, I would recommend somewhere along the character cavalcade route, which starts near the Frontierland entrance to Pecos Bill's and ends at the main street railroad.
