Anniversary at WDW on a Budget

So our bi-annual Anniversary WDW trip is coming up in 2 weeks but unlike past years (this is our 4th visit), money is tighter - we have 3 kids so now most of the funds go to their tickets, food, you name it. Hubby's request is that we have a smaller budget for our own celebration which I don't mind really, but just a bit stumped.

What are some unique, cheap or free fun things to do for our Anniversary? And maybe a moderate place to eat? So far we have mini golf on the list, maybe ride the surrey or carriage ride around. What are some best kept secrets for a WDW Anniversary Date on a dime? :]

Oh and if you know anything that's new that would be cool. I feel every time we come back to a whole different WDW!

Outside of WDW, at Gaylord Palms Resort; they have 3 acres under a glass roof. The area under the roof is divided into three areas Key West, Everglades, and St. Augustine/type fort. There are fish, snakes, gators, etc that you can view. You can spend 3 to 4 hours over there touring the resort/areas and it does not cost anything.

sports: golf, fishing, RPDE, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, AKL/AKV
In front of HoB, there is usually a singer in the afternoons that you can listen too. Also, the stage at DTD usually has a show/singer in the afternoons.
