Animal Kingdom closes (for now) at 7:00 PM during our trip, and we have reservations for Whispering Canyon Cafe at 7:55 PM. Does anyone know how long going back and forth between these two usually takes on the Disney buses? I want to get in as much park time as possible, so is it realistic to think that we could leave AK after closing (assuming we leave at 7) and make it to our reservation on time?

If you leave right at 7 (I'd leave a few minutes early to beat some of the end-of-park-day crowd), you should be able to make it. Maybe leave at 6:50 rather than 7. But giving yourself 90 minutes is overkill, in my experience, no matter what Disney's recommendation is.
 
An hour should be more than enough time. The bus ride itself should only take about 20 minutes so that leaves 40 minutes for waiting on a bus. Of course there are always unknowns with Disney transportation and that wait time is a big one. As the previous poster said, if you're laving at park closing, the bus area will be at it's busiest of the day and you may have to wait on multiple buses, or you could just get unlucky and wait a long time for a bus to come. However, under normal circumstances an hour should be more than enough. You can always abort the bus plan and grab a cab if it's getting to be closer to 7:30 and no bus in site.
 

Disney recommends about 60 minutes for travel, especially if you are leaving at closing along with so many others. AK to WL are at opposite ends of the resort from one another so it is one of the longer bus rides. You will also need to add in wait time for the bus, especially at closing when there could be long lines at the bus stop and you might have to wait for one or more buses.

If you want to stay until closing, uber or a taxi will take less time.

If you are willing to spend $5 - $10, simply request an uber at AK park closing and you will most likely be at WL by 7:30 pm at the latest. Uber and cabs pick up fairly close to the park entrance (you could get a cab, too, but it will cost more). Less walking, more park time, no waiting for or stressing over buses. It once took us 90 minutes to get from EP to CR. We swore off buses after that and take uber just about everywhere on WDW property.

The WL will be the first stop on the trip from AK. The ride itself takes about 22 minutes or more. You would need the bus to load and take off fairly quickly. If they have to load an ECV or two then it could take some time before you pull out of AK. I would leave the park a little early if you want to get to WCC on time.
