I'm trying to find out which day to go to AK for our week we're going to be down in Florida. It appears that AK has early entry every day for our week. We're not staying on property so we can't take advantage of that. Any day better than the other? Thanks!

Aside from the actual opening times being different, there really won't be any difference as far as day of the week goes. I would just pick whatever day seems to work best for you, and perhaps which day works best for FP+ selections. Fast Pass availability is really the only thing I plan around these days. If you're able to get the selections that you want, then the crowd levels won't really make a difference.

Since you’ll have a 30 day FP window your chances of a FoP FP are low/non-existent, so I’d just plan it wherever fits best in your schedule and not worry too much about it. Keep an eye out about a month out for closing hours to be updated. If they do, that may further influence whatever you decide today.

Thanks for the advice. I just thought it was odd that AK is scheduled for early entry every day.

It is WDW trying to spread out crowds a bit with the opening of Galaxy's Edge. You noticed MK has EMH every morning also, correct? It is a real disadvantage for offsite guests. Depending on you group, you may want to try late-night touring instead as rope drop is not an option. Check out easywdw for a blog on doing AK with a late start and staying through close.
