I think your plans look great!! Its looks like you have lots of buffets, with a few special meals thrown in. I always suggest buffet dining with small children, that way if someone has to take the kiddo out of the restaurant and entertain them, no one has to eat cold food. I'm all about maximizing eating hot food, because, lets face it, it doesn't happen too often when you are a mom!
I also want to share our experiences with Fantasmic and Everett. We took him for the first time at 4 months and then at 6 months. We skipped it at 10 months because I wasn't sure he'd sit through it. Fantasmic is REALLY loud! I don't think I realized it before I had kids, but if Seth is sensitive to loud noises, you'd be better off sitting towards the back. Also be sure to cover his ears during the Pocahontas part right before they start digging for gold, because there is a SUPER loud cannon shot. I kinda forgot about that, but a college program CM was sitting next to me, and he gave me the heads up before it happened!
It looks like you are going in with lots of flexibility, which is great, because we all know how quickly things can change with babies. Their preferences, their schedule, what they will and will not eat can change pretty drastically month by month. I found that traveling with Everett made me tweak my itinerary even more than I usually did (and I'm usually pretty fond of tinkering with the plan!)
