Maybe because people would be up in arms if they set the attendance limit so low or hiked up the prices so high to the point where there would be little to no lines at each attraction.
Until Disney calls it something like Mickey's Very Merry Christmas Party, then many guests are happy to pay for them.

- but in response to OP's follow up question:OP, Disney DOES offer an "easy" way for guests to have a relaxing time at WDW. They just charge a nice chunk of change for it.
It is called the personal "VIP" tour guide service. They give you a personal shuttle to the parks, VIP seating, and "The ability to experience some of your favorite attractions efficiently, even repeatedly." It costs an extra $315-$500 per hour (per WDW's website), with I think a min six hours per day, for a group up to 10 people.
I don't think many folks are buying it, but folks aren't up in arms about it either. This is in addition to the premium/platinum package options, club level rooms and deluxe suites. Each of those services also offer some element of what you are asking. Club level rooms, for example, offer additional staff. Club level guests don't wait in the front desk lines. They also don't (have to)make their own ADR's.
I'm not in any way commenting on your plans, just pointing out that premium service options do exist. The patricians don't have to bother with plebian inconveniences.

In all seriousness, imagine what would happen if someone like Oprah tried to wait in a standby queue - instant chaos.
It's far less predictable.
