Almond Blueberry Coffee Cake

I tried this recipe for the first time last weekend. It was a big hit with everyone. With blueberries in season it's a nice cake for summer.



Almond Blueberry Sour Cream Coffeecake


Filling
1 (7 ounce) package almond paste, chilled
1 pint blueberries, washed and stemmed
2 tablespoons flour
2 teaspoons grated lemon rind

Cake Batter
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) butter, room temperature
1 1/4 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons confectioners' sugar for dusting cake


Preheat oven to 350 degrees F. Grease and flour a 10-inch Bundt pan (a coated pan needs only to be sprayed).

To make the filling:
Grate the almond paste into a medium bowl. Add blueberries, flour and lemon rind. Mix well and set aside.
NOTE: It may be easier to mix the berries with the flour and lemon peel only. Then, when layering, place coated berries atop batter followed by pieces of almond paste to more evenly distribute the two.

To make the cake:
Sift the flour with the baking powder, baking soda and salt. Set aside.
Beat together the butter and sugar until smooth. Add the eggs, one at a time, beating well between each one. Scrape down the bowl and beat until light and fluffy. Mix in the vanilla extract. Add the sifted flour to the creamed ingredients, alternately with the sour cream, ending with flour.

Spoon 1/3 of the batter into the Bundt pan and top with one half of the reserved blueberry mixture. Repeat with 1/3 batter, topping with remaining berries and ending with batter. Bake for 45 minutes or until cake is a deep golden color and wooden pick inserted near center comes out clean.

Cool on wire rack for 20 minutes. Gently loosen the sides of cake with a thin spatula and invert on the wire rack to finish cooling. Dust with confectioners' sugar to serve.
Makes one 10-inch Bundt cake.
 
This sounds really yummy. I have never bought almond paste though. The recipe says to grate it, so I assume it is a bar of paste, not something you squeeze out of a tube? Where do you find it at? I'm doing WW right now, but am going to save this recipe for a special occasion.
 
The almond paste can be found in the baking section of the grocery store. Look near the baking chocolate, nuts or cake decorations. It is sold in blocks (boxed) as well as sausage like tubes.

When I tried the recipe I froze the block a while but it was still sticky and didn't grate well. I ended up cutting off chunks which didn't mix well with the berries. Hence, my additional note about layering the berries and almond paste pieces seperately to evenly distribute them.

This would be a great treat after WW.

I used your receipe and made this cake. WOW!! My family ate it up in 1 day! Thanks so much!! It kind of tatses like pignoli cookies (italian almond/pine nut cookies). We get them in Little Italy in Baltimore. This cake is even better though!

I haven't done this one yet since I don't have the almond paste. I'm thinking about trying it for our C'mas brunch. I got a big box of blueberries & froze them & I'm getting tired of blueberry pancakes. ;) (DH asks for them every weekend.)
 
This recipe sounds great. I have 3 barbeques this weekend coming up and I am definitely going to make this for 2 of them (2 of the parties will have some of the same people, so we usually make different items for each party.) And I too love almond, so I would love the Almond Bread recipe.
