I just wanted to respond to the questions about the Sushi being fresh at an all you can eat place. Not sure if there are any 'Wasabi Japanese Buffet' restaurants in the Orlando area however there are a couple here in Jacksonville, not only do they have all you can eat sushi, they also have at dinner time a tepanyaki grill (like at a Japanese Steakhouse, you only get 1 serving) and a buffet with tempura veggies, chicken, and shrimp as well as other Japanese/Chinese food type items on their buffet, love the salt & pepper shrimp! (also crab legs at dinner).
At the sushi stand, they have about 4-6 (maybe a couple more) sushi makers there the entire time making sushi FRESH where everthing is rotated, they begin making the items that they see are about to run out. They have a big variety of sushi from raw, to tempura dipped - about 20+ items in all. The quality is just as good as any normal sushi restaurant but not any where near as good as a high-class, uber-expensive sushi restaurant.
Its a trendy place to eat & dinner runs about $22 for AYCE, lunch about $10
I googled 'Wasabi Japanese Buffet Orlando' & got a few results, maybe you can call to see if they are the same type restaurant I described above.
