So on the WDW website, the breakfast character site says that it goes until 11:10. There's a reservation for 11:00, which would be a good time for my family. At 11:10 do the princesses disappear, along with the breakfast foods?

No the Princesses will not disappear when service ends, they will make sure all of the rotation visits all of the tables before leaving for a break. When lunch starts up they will be back as well. I believe breakfast and lunch are pretty close to each other at Askerhush so if you linger a bit you will see the Princesses a 2nd time when they come by at lunch.
