So we had plans to rope drop (9 am) AK and head straight to EE. We have FP+ for 9-10, so we were going to ride stand-by at RD and once the line started to grow, use our FP. Hopefully getting in at least 2, maybe more, rides with minimal wait.

Now, rope drop has moved to 8 am. How does this affect EE? Our FP isn’t until 9, how quickly will the lines build there? Do we have time to swing past Dinosaur on our way to EE and still ride with little wait once stand by?

You should be able to ride EE 3-5 times in a row with little wait each time.

Do EE first.
Then, go to Dinosaur.

You'll likely be able to ride EE without your FP so you could easily change that FP to another attraction, after you make sure you have enjoyed enough EE that early morning.
(You can even wait to change a FP+ AFTER the window closes on it.)

Also, if you want to ride EE again later in the day (even several more times) and don't mind splitting up,check out the Single Rider Line.
About the best, most useful SLR at WDW.
