My mom is going on a cruise (non Disney - Holland I believe) in December with her brother's family and her mom & dad. Today she was wondering if there would be a/c onboard - at least in the restaurants.

That started me wondering about Disney ships. I can't recall reading anything about a/c so far. Do they while dining? What about staterooms?

Every ship I have been on is fully air conditioned (including Disney), and each stateroom has a thermostat to adjust temperature. The thermostat may not have as wide a temperature range as the one you have at home, but your state room host can make it warmer or cooler for you if need be.

Yes, everything indoors is air conditioned. In fact, you might want to bring a light sweater for the dining rooms, because they can get cool.

For Disney, there is A/C everywhere, including in the staterooms. I can't imagine any cruise line not doing that, it would nit be pleasant without it.

The air conditioning works very well. I always bring a sweater because I get so cold in the movie theater and the Walt Disney theater. My DH always ask the room steward to make our stateroom cooler Brrrrrrrrr.

For me the a/c is set WAY too cold in the dining room and theaters....I dislike a/c everywhere,

OP, as a frequent HAL cruiser, I have noticed that some of the public areas can be very chilly. This seems to vary from ship to ship. We have found that the Crowsnest Bar, for example, can be very cold. Also, if you are out on deck after sunset and the ship is moving--there is a very stiff wind. Bring sweaters, even if you are going to a warm weather destination.
