Wondering if Universal has any type of "afternoon discount" ticket if you just want to go to one park/one afternoon/evening during the summer months?

No. Full price right up till closing time.

The only discounted after 3 PM or after 4 PM tickets are through conventions. If you are here for a business workshop or convention, some of them purchase after 3 PM bulk ticket that you can buy, but there is nothing available to the general public.
