Advice on Counter Service during Lent!

Just realized that we'll be in the parks this Friday, and hadn't thought about what we're going to eat!

For those of you who fast during Lent, what/ where do you eat? We park-hop, so Friday will probably be Epcot in the morning and then the Animal Kingdom for the rest of the day (and back to Epcot for evening EMH).

What "non-meat" ideas do you have for the AK? Cheese pizza at Pizzafari doesn't get it. Is there somewhere to get fish or a salad?

If we find ourselves back at Epcot at dinner time, I'm sure the Fish & Chips stand at the UK will be packed. Any suggestions on alternatives? Counter Service only.

If you are still in Epcot the Sunshine Seasons has a couple of choices. My husband likes the Salmon.
 
AK is a little tricky, but there is a shrimp lo mein at Yak and Yeti counter service that is very good.

I'd also sugges the falafel at the Tangerine Cafe in Morocco. No meat and super yummy!
 
There is a counter service restaurant across from Tusker House (Tamu Tamu???) that has a decent tuna sandwich.

At Epcot, you can get sushi at Yakitori House, the counter service in Japan. I'm not a sushi fan but others have given it decent reviews.
 

Excellent suggestions everyone! My first thought was that we would have to make ADR's (uh, a little too late for that), or have to trek over to the MK for Columbia Harbour House fish.

I really like the idea of something different, so the suggestions you guys gave (the salmon at Sunshine Seasons, the shrimp lo mein at Yak and Yeti, the tuna sandwiches at Tamu Tamu, and the falafel in Morocco) are certainly ones we'll try on Friday.
