ADR's for Thanksgiving week...What have I gotten myself into???

I am beginning to plan our Nov 19th-26th trip with 3 adults,4 kids(10-16), and am wondering if there is any sage advice for us.
My daughters(15,16) are interested in any and all Princess themes they can get their hands on,lol. The other 2 kids are 10 and 13,and being boys are more interested in the Sci-Fi restaurant and Fireworks package shows.
We are staying @ a BCV 2BDR, and will do almost all of our breakfasts in-room. We have not decided on the DDP yet either. I have a $50 HOB cert from restaurant.com that we bought for $4. We will use that in conjunction with a DisneyQuest visit.
I am very interested in an Animal Kingdom restaurant along with a visit to view the animals on property with night vision goggles afterward.
I am leaning towards 1 TS meal, and 1 CS meal per day sort of schedule, with plenty of pool time @ SAB!
We visit every other year, so are on a very relaxed(if that is possible) park visiting schedule.We don't try to squeeze every single second out of our allotted park hours.

That is a lot of info above, I know, but maybe if someone with similar plans, or with previous experiences would like to share with me, I would greatly appreciate any and all input.

We were there last Thanksgiving for 9 days and that was our best trip yet!! Definitely go to DHS for the Osbourne Dancing Lights. That was truly amazing!! We had our Thanksgiving dinner at Boma and then went to see the lights. The food and service was wonderful!! Wednesday, Thursday and Friday are very busy days in the park so go early! Other places we ate at were Yak and Yeti, (wonderful) Ohana (always go to), Crystal Palace (another must for us), 50s Prime (that was fun), San Angel (so so), Wolfgang Puck Express (another must), Cafe May Cafe (great crab legs)! You will love Thanksgiving at Disney. We ate dinner at Crystal Palace and had a wonderful view of the lighting of the castle! Everything is decorated for Christmas. Definitely our favorite trip this far out of 5!

I will be there the same week as you! (Nov 20-28) I have 4 kids as well - 15, 13 and 3 year old girls, 7yo boy! My 15 year old will turn 16 right after we leave, and my 3 year old will turn 4 while we are in Disney. We are doing DDP and will pay OOP for 1 or 2 additional TS meals. We are hoping to make ADRs for CRT (on my youngests bday!), Chefs de France (to celebrate my oldest's sweet 16), Biregarten on Thanksgiving, HDDR, O'hana (either breakfast or dinner), and probably Mama Melrose (Fantasmic!). Of course this could all change- but this is my plan for now. I have also been considering 1900 Park Fare Dinner, Le Cellier lunch, Tusker house breakfast, Prime Time... What are you planning for Thanksgiving?

I am leaning towards Cafe May Cafe for Thanksgiving, seeing as BCV is where we are staying. Then maybe a trip to Epcot, and the American showcase to see if anything special is going on there for the holiday.
