Not sure if we're fitting in too much on any of these days, we are typically heavy eaters on vacation.

that is a lot of TS meals. Which equates to a lot of time dining

For me it would be too many structured meals. If it works for your style of vacation, go for it. Lots of great options in there
 
We're also worried about the heat, being from the northeast, we usually try to go down in January and December but we wanted to do F&G at least once to try it.

Are you planning on lots of park time b/c you won't get that with this plan...are you on DxDD and that's why there's so many choices?

Working backwards, if it were me, I'd do:
A TS on Day 9 for breakfast (I'm gonna drop other ones:)
I'd drop the monorail dinner on Day 8 and just stay in EPCOT for dinner, unless you are leaving the park for good around 4pm or so...
I'd drop Frontera from Day 7 - getting to Disney Springs and back means you are gonna be done the park again at 4pm or so...and you are going to soak up 90 minutes of park time with SC and possibly a little for BoG depending how fast PPO breakfast goes. I'd eat on the monorail line or in park for a 3rd meal.
Day 6, 5, and 4 are fine.
Day 3, I would drop Sanaa...no sense leaving the park, winding your way there and back - that takes time...and then having another sit down meal in the park that takes time...
Day 2, I'd change entirely, unless you are planning to not be at MK after breakfast...Morimoto's would go as it's most inconvenient in the plan...or I'd arrange it so you hit that for dinner and an evening in DS and just find something easy to eat for lunch in MK...
Day 1 is fine.
 

I am in CT and the heat can be brutal.

We usually grab quick bfast then a TS lunch midday, back tot he resort for AC and downtime then back out at night. Usually do not want another TS for dinner but we may opt for signature dining instead of parks

all depends on your priorities. and you can always cancel, as long as you do it the night before

Just some context around my reasoning with some of these

Magic Express on Day 9 will be sometime around 8am so I'm worried Kona might take too long. We've had bad luck getting seated even remotely close to our reservation in past Kona visits sometimes up to 45 minutes past the reservation time.

On Day 8 we're out of Epcot for good around 2:30-3:00pm that day planning on finishing the last full day at Top of the World Lounge with Wishes after visiting Trader Sam's and Mizner's or Citricos Lounge (and Geyser Point if there's time) we'll make the call whether we take a Poly bus or a Wilderness Lodge bus from Epcot when we see what time we finish at Epcot.

On Day 7 I don't think we'll have the stamina to be in the park past 4 we also wanted to do all of the Souvenir trip shopping (World of Disney) that night before/after Frontera and have the souvenirs shipped to the hotel so we could just pick it up and have it ready to be packed on Day 8.

Day 3 will be Disney Springs in the late morning (mainly as a way to transfer to AKL for Sanaa as it was listed as a must for our party and we ran out of dinner spots but we'll spend a few hours there) We then have AK in the afternoon from 2:00-9:15

Day 2 is a result/side effect of trying to shoehorn Morimoto in where we ran out of open dinner spots. We are planning on hitting MK early to go through 3 fastpasses, take a Saratoga bus to Congress Park and walk into DS on the Marketplace side visit the stores on the Marketplace side mainly the Xmas store and Marketplace Co-op on the way to Morimoto mainly because we won't be able to make it over to the Marketplace side other nights. After lunch we'd hop on a BW bus and relax at the pool before getting ready for dinner.

That is a lot of food and I love food! If you're worried about the Florida heat I would recommend going to the parks early in the morning then leaving around noon to relax at your hotel/pool. When you go back to rest at the hotel its easier to go back to the parks in the evening when it's not as hot out. I wouldn't have such big meals so close together, if you really want them all on the same day I'd try for some late dinner slots to allow lunch to digest.
