Adding dining plan to reservation

Are you able to add a dining plan to your reservation at any point, even if it is after your "paid in full" date? How about at resort check in? I currently don't have it booked and am still debating/number crunching. Just wondering how long I have before I have to make up my mind (although I am kicking myself after today's price increase!).

Dining plan must be added no later than 72 hours before arrival day for reservations through Disney and 2 days in advance for reservations through the DVC office.
