Acute Pancreatitis and Counter Service Restaurants

My Mom suffered an acute pancreatitis attack on Friday and was hospitalized for the weekend. We are (at this time) still planning on going on our Disney trip in 10 days.

Does anyone have suggestions for low-fat counter service options? I'm pretty sure I can add this request to our table service reservations and the chefs will help her out but I'm not as sure how to handle counter service restaurants.

I found something really helpful on TouringPlans that I'd never noticed before. It allows me to enter a food, location and type of restaurant and searches current menus.

I put in 'broccoli, magic kingdom and counter service' and it listed 8 different options at a Columbia Harbour House which is a place we've never tried before but it looks like we will this time!
