A Girl's Trip Becomes So Much More! My Trip Report is Posted!! 6.8.11

Glad to hear that your grandmother is stable. What is she doing for nutrition? Will she drink Ensure or some other nutrient drink?

Your Mexican celebration looked fabulous. The churros looked very delish!!!!

Your Mexican night looks so yummy. DH and DD don't like anything mexican so I never make it. Can I come over next time?

How is your Grandmother doing? Hopefully she has started eating again.

The churros look so good. I second the request for you to post the recipe:thumbsup2

2 weeks from today will be my last work day before leavign for Disney!! So very excited!!! :goodvibes

My alert did not get to me that I had comments! :confused3 So sorry for the delay in responding!!!

Looks delicious! Would you share the churro recipe? I can't believe you say they are easy to make. Look fabulous!

I will be happy to share!! They are very easy!! I will post it at the bottom of this post!! :thumbsup2

yUM! I love the food porn!

I am going to have to check out Target again. Yesterday I bought two fan/misters at KMart - they were $7 each, still half the price as DisneyWorld. I am not opposed to returning them if I find cheaper at Target (though I looked @ target 2 weeks ago & didn't find them anywhere)

Hope your grandmother is improving.

My presentation isn't as lovely as they do at WDW but it is food porn all the same!! :rotfl:

I wonder if Target has different selections in different regions? I suppose $7 at K-Mart is not terrible though. We do not have K-Marts anywhere close to us!!

She is about the same but they say that is okay...thanks for asking!

how did Imiss that? Gettysburg is awesome. WE loved it. Tip: stay at the KOA outside of Gettysburg. They have a few cabins if you don't have a camper or don't feel like bringing it. Its a very nice clean family friendly campground. Nice pool, fun story times at night. Down the road from the campground is a huge garlic garden. its at a womans's house. she is really nice, has all sorts of herbs (and garlic!) to purchase. We needed mint for our mojitos:rotfl2::rotfl2: and I drove up and chatted with her. She does garlic tastings for you--we didn't have time that trip, but we will go again next time.

anyway the KOA there is great. about 10 -15 minutes from town and from various battlefield points.

keep checking the hours for your trip. I checked last week after seeing a late night mentioned on Diane's PTR and found a lot of extended hours. You may be able to do Illuminations twice. My DH LOVES Illuminations and would not mind seeing it more than once.

We love camping so I definitely need to check out the KOA. They are always so nice and clean too!! Thasnk for those tips! I have made notes!! :goodvibes

I noticed the hours last night were different! My Wednesday at Epcot has been made an EMH AM so now we have an 8am start!! I think I will have to monitor up to my departure day! But I like more hours!! :goodvibes

She is drinking Ensure and water. She prefers Coke but my Dad goes during meal times and tells her she has to drink the "milkshake" and she usually does for him.

The food was very good--if I say so myself! I love Mexican food!

Come on over! too bad it is so far!! We do some type of Mexican atleast once a week--enchiladas, tacos, fajitas--and we go to a local Mexican restaurant every other Friday night. It is so bad they know us by name and we do not even order anymore....they just bring us our food!! :rolleyes1

She is doing fine...the same but they say that is fine!

I have the recipe below!!!!

Here is the requested recipe. It is from the May 2011 edition of Southern Living magazine:

Oven Baked Churros

HANDS-ON: 15 MINUTES
TOTAL: 30 MINUTES
COURSE: Desserts

Ingredients
1 (17.3-oz.) package frozen puff pastry sheets, thawed
1/4 cup sugar
1 teaspoon ground cinnamon
1/4 cup melted butter

Preparation
1. Preheat oven to 450°. Unfold and cut puff pastry sheets in half lengthwise, and cut each half crosswise into 1-inch-wide strips. Place strips on a lightly greased parchment paper-lined baking sheet. Bake 10 minutes or until golden brown.
2. Meanwhile, combine sugar and cinnamon. Remove pastry strips from oven, and dip in butter; roll in cinnamon-sugar mixture. Let stand on a wire rack 5 minutes or until dry.

I hope you enjoy!! Oh and I added the caramel sauce! I just got the Smuckers Caramel sauce int eh ice cream topping section!

Whooohooo! Are you beyond excited, yet??? :woohoo:

So glad your grandmother is drinking the milkshakes!!!

Thanks for posting the recipe for the churros! They do look very easy. I may have to attempt those soon and have DD help. She is my budding chef and loves to help out in the kitchen. Now I just have to get the recipe for the Dole Whip and we will be set. :thumbsup2

I'm so happy to hear that your dad is able to get your grandmother to drink her milkshake. That a step in the right direction.

You churros look realy delish (as do the other dishes you cooked). I've seen churro mix at a couple of grocery stores but haven't ever attempted to make them.

I am way beyond excited! It almost seems surreal that it is almost here!! :yay: And I am glad my grandmother is getting soemthing in her!

We love experiment cooking in our house! I open the cabinet and throw stuff in the pot. Both DD and DS are learning to cook this way too! I think it is great your daughter is a budding chef! It is so much fun to spend the time in the kitchen with them!!

We try to see the positive in all of this for sure! With her being 96 you know she won't live another 10 years but she is stubborn enough to hold on that long!!

Thanks...the enchiladas are one of my "throw together" meals. The churros were very good! I keep missing out on the ones at WDW so I cannot compare but they are on my "musts" for this trip so hoepfully I will have an idea how close they were. My sister says the WDW churros are unbelieveably good and these were so yummy that if the ones at WDW are better...I am in major trouble!! :rotfl:

Hunter is not a sweet eater but he absolutely loves churros from Walt Disney World. I like them too and the fact that they are reasonably price makes them taste even better.

more hours = more fun!!!

I am definitely going to have to make an effort to try them!! Just the thought is making my stomach growl!! :)

I am all about more hours!! My family may collapse though!! :rotfl:

I love your "subtle" Disney party. I think doing WS meals is a perfect idea. :thumbsup2

Wow! That churro recipe does look easy. I may have to try that. Your enchiladas look yummy too.

8AM opens are awesome - if you can get everyone up in time.

Well...you know where I got the inspiration!! ;) Definitely not as cool as yours with the cute decorations though!! :) Definitely give the churros a try....yummy!!!

We tend to be early risers and do okay. Also I don't have little ones to deal with which helps. Everyone in my group is old enough to get left and join in later if they are slow!! I love the early mornings in the parks!!

A quick update on where we are in this trip!! One week from tomorrow I will be heading to my mom's so we can leave pre-dawn on Thursday morning!! :woohoo: The wait time for this trip has flown by so quickly and now that is upon us, I feel as if I am not prepared....but it feels like this everytime!!

So what have I been up to?? Well no pictures in photobucket just yet, but we had our countdown dinner last Thursday.....the country??? France!!! We had Chicken Diablo and Provoencial (sp??) Beans and beignets!! It was very good! I googled "easy French recipes" and went from there!! :lmao:

Over the weekend we went camping at a local State Park. Comedy of errors on Friday night...then we realized it was Friday 13th!! :scared1: It started with a wreck that delayed us gettign there (not us, but we got stuck in the traffic!), then a SEVERE thunderstorm with hail came through as we were trying to set up our pop-up--causing things to get very wet! And the worse (at least for me)?? Trekking to the bathhouse in the damp, dark woods, I came across a 4ft snake heading into the men's room-the snake not me!! :scared1: :scared1: :scared1: Needless to say I wasted no time, or vocal cords, in letting the other campers know what was going on!! Worse.....I left my sweet DD alone by the door as I sprinted away! :headache: Thankfully she was okay and my family thought it was hilarious the rest of the night! The kids said "This has been the best, worst night ever!"....ahhhhh, memories!! :)

So on to Disney news....the things I have gotten completed!
X Keith's plane ticket booked
X Magical Express set up for Saturday...more on that
X almost everything purchased
X final plans completed
X Online Check-in completed as of 6am this morning! 10 days out and I
am ready!!!

Left "to-do"
__ Clean my house!
__ arrange for my dog to be watched
__ finish packing
__ print out my Touring Plans, laminate and complete binder!
__ purchase those last minute snacks
__ get my cash from the bank (this is an ordeal for me since I rarely go
to a bank...I do everything electronically so planning is involved to
to get me there!
__ get to a good stopping place at work---major stress on me right now,
so hopefully by next Wednesday I will be good but this also
explains few updates and no pictures!

I am sure there are other things....but I simply cannot remember! :upsidedow

Back to the "Saturday" deal....due to Keith's job he was afraid to schedule a flight on Friday in case they needed him and then he would be "stuck". So he is now flying in on Saturday mornign and will hopefully be able to join us at Magic Kingdom on Saturday around 3:30pm or so. i have read some horror stories on Magical Express that makes it sound not-so-Magical....hopefully this will not happen to him! He will have no luggage and no carry-on bags just himself so hopefully TSA will not think anything either!! :rolleyes1

This has meant a slight change in Friday and Saturday plans:

Friday remains the same except rather than after our afternoon break us goign to DTD, we will head back to MK and do the fireworks and parade this night.

Saturday: a slight adjustment in that we will take an earlier break, eat lunch at the resort, meet up with Keith and return to MK. Tour for a little prior to our 6:30 reservations at 1900 Park Fare. Then return to MK for nighttime touring and "avoid" the parade and fireworks viewing. Last night I determined I want him to experince a few things he hasn't before: Carousel of Progress, Jungel Cruise and Tom Sawyer Island (you would have to uunderstand my hubby!) and see what he has before: POTC, Haunted Mansion, Splash and BTMRR...maybe Buzz. So if we can fit those in I am good....he doesn't like MK so he doesn't care! Or depending on moods, after we eat at 1900 Park Fare, head to DTD for awhile and ride the boat back. I will fit in the ferry ride to Grand Floridean for him earlier in the evening. He likes the boat transportation! :goodvibes

So there we have it. I have a full week ahead of me but then I will be taking off for our "magical journey"!! I hope to update a coutndown of sorts between now and then!!

Whhhoooohhoooo! :woohoo: for next Thursday morning. Your trip is getting so close. We leave on Sat. the
28th we are driving down, so we have 1 full day of travel.

The French dishes sounded great! Such a wonderful celebration to get everyone super excited for the upcoming WDW trip! :thumbsup2

The camping trip sounds both hilarious and scary at the same time.:scared1: Boy, what memories you made on that camping trip. The kiddos will one day tell their kids about that particular adventure.

It sounds like you are really nailing down your plans.

Can you believe you will be in Disney next week? YAY!!!!

I laughed out loud at your camping story. A would have ran like the wind too had I seen a snake that big! :scared1: Snakes and heights are my two greatest fears.

The last time we went camping, we had a lady and her great big dog next to us. She was...let's just say....not so nice and she was nosy too. She watched every move we made and would pretend that she wasn't looking at us. After a while, she came over to our campsite and started telling us what we could and could not do. John is usually a patient man but she was being really pushy. He told her that he was a grown man and was capable of camping without her help and it would be best if she went back to her tent and slept with Cujo. :lmao: At the time, I was mortified that he was talking back to the lady but once she left, we were all laughing hysterically.

It looks like you're making headway in marking things off your "to do" list. Hopefully, the rest of your time at work won't be too stressful. I'll keep my fingers crossed for you.

9 days!!!! :woohoo: :woohoo: :woohoo: I love the feelign of checking off those details each day as I accomplish them!!

The french dishes were so good....I am not too "up" on French cuisine but it worked! And everyone actually seemed to like it which was an accomplishment in itself!!

The camping trip really turned out to be a great trip and definitely good memories!! :goodvibes

Sadly, I am really the one that makes my job stressful....self-imposed goals and once I have a goal it is full-force!!

I remember the camping story and that lady from your TR  and I am terrified of heights also!! Here is another story you may find funny since you can relate! Keith and I went on a cruise and one of the excursions was to Chichen Itza (Mayan Temple/Ruins). At the time you could climb the stairs to the top of the temple. No big deal going up....365 steps the size of a small childs foot. We ran to the top and when I reach the top I swing myself around....to a vast open view of the jungle!! :scared1: I suddenly went into panic mode and Keith literally thought we would not be leaving the top! I plastered myself to the wall of the room (I don't recall the proper term) and started hyperventilating. I had complete strangers giving me water and candy. In the end I got down on my rump step by step with Keith in front and some stranger named Patrick from Ireland holding my hand as my eyes were tightly and firmly shut!!

The worse part, though, was when we got to the bottom, we observed a sweet little 90 year old lady walking down the stairs unassisted! This was the same lady we watched being escorted on and off the elevator with a walker each night on our way to dinner. I hung my head in shame......:upsidedow
