I love that you are ending your trip at Epcot! We usually end with Magic Kingdom, but sometimes I wish we were ending this trip at Epcot, since we are staying so close. I think your idea of trying the Tonga Toast at Captain Cook's is a great one! I have thought of hopping over there just to try it.

I just love Epcot and ending the trip there. I may seriously delay Illuminations until the final night for a big finale!!

I want to try Tonga Toast since so many people speak so highly of it, so I hope it works out!

Your trip to Vicksburg looked like fun. I didn't know there was a Coca-cola museum there. Have you been to the big one in Atlanta? I went about 20 years ago and would love to go back.

Evidentally Vicksburg was one of the original bottling locations. It isn't on the "grand" scale but interesting enough! I have not been to the Coke Museum in Atlanta but it is on my to-do list! A lot of friends have gone to it and recommend going!

Now we are counting down the days and even saying things like "Four weeks from today we will be doing ________!"

Madison and I went shopping today and I think I have almost everything we need except drinks and a few food items. But I know if I buy those things now, I will simply have to return and repurchase...a house with teens means nothing is safe!!

One of my favorite finds was at Target. They had water misters that you pump and they mist for $2.50!! I purchased a few and thye work pretty well! I hope they will help on those sultry afternoons!!!

I found the mister in the "dollar" section when you first walk into Target. But it is really $2.50 rather than $1. It is nice becuase there are no batteries required. You just fill with water, pump and mist! Here is a picture of the misters. I tried out the pink one (you can still see water droplets!) :rotfl:

I was just in Target this weekend and didn't see the misters. I need to go back and look for them. Did they work well?

Both of our Targets had them. I passed them up a few weeks ago when I first saw them and then decided to give it a try. I only bought 2 since I was unsure how they would do. I thought they worked very well. They have a strong mist.

It is getting very close. I realized my ticker will say 2 weeks (and 6 days) tomorrow!!! :woohoo:
 
My mom sent me an e-mail this morning regarding my grandmother. I am now slightly panicking because she is not doing well. She is 96 years old and has been in a nursing home since the fall. She has stopped eating and my cousin (who is an internist) says that it is best to not put her on a feeding tube like the nursing home has recommended.

Obviously (wiithout saying) her health is a concern and then add in that our trip is roughly 3 weeks away and I am a little panicked about how that will play out! :confused:

Anyway....EEK!! Hopefully there will not be a reschedule for this little trip!!

:hug: I am so sorry to hear about your grandmother not doing well. I have the same exact concerns with DH's grandmother. She is 92 and not in the best of health with severe dementia. I just pray she stays healthy until we get back from vacation. On our very first vacation to the World, my mom had a breast cancer scare and it put a real damper on the vacation. She found the lump to be benign on the last day of our vacation. I was glued to the cell and worried sick the whole entire time. It's hard to book a vacation when someone in your family is not doing well. I will keep my fingers crossed for you that she starts eating again and you all don't have to reschedule.

Thanks! I know what you mean by the stress interferring with your vacation. We had a major medical issue during Thanksgiving but the doctor told us to go ahead with our planned Thanksgiving trip. We went but the situation was constantly in the front of our minds (not even the back!) and we decided to come home early. It was a major damper! Thankfully that situation has been taken care of...and was before Christmas. I had trouble getting into the Christmas spirit even!

We think my GM has dementia but she hasn't been diagnosed. I think it is hard to determine (when a person reaches that age) if it is demnentia or just "old age". It is sad when they do not even recognize you anymore! :confused3

Thank you! :) I talked with my Dad (it is his mother) and he had a slightly more positive perspective which made me feel better. She still isn't eating much but hopefully that will change soon!

Before I give any updates on our pre-planning I hope everyone had a wonderful Mother's Day!! Well, those that are mothers!! And I hope the rest had a great day in general!! :goodvibes

My weekend has been busy but really nice!! I got to eat at my favorite restaurant Friday night!! :banana: I got to see a wonderful baseball game on Saturday and got sunburned in the process! :headache: But it was a great afternoon so I can put up with a little discomfort! Then today I got to spend the day with my parents, kiddos and hubby....so all in all this has been one of the best Mother's Day weekends ever!! :goodvibes


Several PTRs I have read had themed countdown meals/parties/evenings and I have loved the concept. However with teens and a DH that "claims" no interest in Disney I have searched for a way to incorporate this into our family!

A few weeks ago I began planning a going away party for a co-worker. It so happended we would do it on May 5---Cinco de Mayo! Well...during this planning I realized that May 5th also represented 3 weeks until our trip!! :banana: And thus began the formation of a plan! I consulted Madison and we decided we had 3 weeks left...we could focus on a 3 day countdown!

For those who have read all the way through, by now you probably know that Epcot is my favorite park! So what better way to countdown than by playing homage to WORLD SHOWCASE!

With our 3 week mark falling on Cinco de Mayo we naturally chose Mexico! We watched The Three Callabreros and enjoyed some wonderful Mexican inspired foods! I chose not to decorate to avoid too much eye rolling from DH but I took pictures of the food...so a little "homemade" food porn!!

For the main meal we had chicken enchiladas, Mexican rice and refried beans...Yummy!

And for dessert...well while at the grocery store purchasing the food for above I was purchasing my Southern Living magazine and what should be in there but a recipe for churros!! And it looked so easy....and it was very easy!! ;) And they were sooo good!! We will be making these again! We could not stop eating them! So here are the churros, and I purchased some caramel sauce for dipping!!

This turned out to be a great idea for our family! Plus Madison and I love to cook together so it provided an extra special mother/daughter time! This Thursday will be another country but you will have to wait to see which one Madison chose!! :rolleyes1
 
Looks delicious! Would you share the churro recipe? I can't believe you say they are easy to make. Look fabulous!

I am going to have to check out Target again. Yesterday I bought two fan/misters at KMart - they were $7 each, still half the price as DisneyWorld. I am not opposed to returning them if I find cheaper at Target (though I looked @ target 2 weeks ago & didn't find them anywhere)

Vicksburg is really nice. I think sometimes when you play tourist in your stomping grounds you learn and see things you wouldn't normally see!

I have a trip worked out for Gettysburg. That is a place I would really like to go.

how did Imiss that? Gettysburg is awesome. WE loved it. Tip: stay at the KOA outside of Gettysburg. They have a few cabins if you don't have a camper or don't feel like bringing it. Its a very nice clean family friendly campground. Nice pool, fun story times at night. Down the road from the campground is a huge garlic garden. its at a womans's house. she is really nice, has all sorts of herbs (and garlic!) to purchase. We needed mint for our mojitos:rotfl2::rotfl2: and I drove up and chatted with her. She does garlic tastings for you--we didn't have time that trip, but we will go again next time.

anyway the KOA there is great. about 10 -15 minutes from town and from various battlefield points.


keep checking the hours for your trip. I checked last week after seeing a late night mentioned on Diane's PTR and found a lot of extended hours. You may be able to do Illuminations twice. My DH LOVES Illuminations and would not mind seeing it more than once.
