Seriously, this is a rental car we're discussing; you can't count on options like Stow and Go seats. Minivans are VERY expensive to rent under most circumstances, unless an agency has a surplus (very rare) and decides to have a sale, and when all the seats are occupied the baggage space left over is usually rather minimal. Also, if this poster is coming from overseas (likely, because of the reference to "hiring" a car), then the insurance on anything larger than a minivan, such as a full-sized van, is going to be really prohibitively expensive.
OP, ironic as it may seem, your best value for money option is probably going to be a Luxury car. They are not very popular with anyone except business travelers of a certain age, so there are great discounts to be had on them most of the time. These huge sedans are usually models such as a Buick Lucerne or a Lincoln Town Car. You'll need one with a front bench seat to fit 6 in it. The baggage will be NO problem in a car like this, because the trunk is easily large enough to hide 3 dead guys in.
Renting two compact cars may be cheaper on rates, and will be a better option for flexibility with a group of adults. The baggage space will be about the same as above, because you'll be able to put one case in the unused spot in the rear seat. What may kill you on this option is the added cost of insuring two cars.
