By the way, the best way of cooking a filet is on the stove top and the oven. 5 minutes on the stove top on medium high so it is seared, turn it over and bake it at 400 degrees for 5-7 minutes, pull it out and let it sit for 5 minutes.

The perfect filet, the way Ruth Chris cookes it.
But, you gotta remember to pay the gas bill..... :rotfl2:

REALLY?? I would never have thought to put a filet on the stove...honest. I asked Jay if he wanted me to do that, but he said to just save them for tomorrow. Not that I really want to eat them after they sat on the grill for 10 minutes or so...at least the grill is covered. If I DO cook them tomorrow, I will follow the "Master Chef's" advice.

I'm with you, Mary...I wouldn't have gone over there, either. I'm hopin to be rid of Jay's brother and sister soon. Once the estate is settled. They are both driving us to drink! (of course, if they did, it would definitely be Banfi)

Okay, you cant tease those of us who were not on this cruise with you. You must share!

Okay...I'm not talented enough to post them here, but I'll go put them on my picture site......

Did anyone else see the news about being able to wear jeans in the dining rooms at dinner now? Thoughts? Personally, it doesn't bother me. THe way someone else is dressed has never had an impact on my dining experience. I am shocked that DCL relented and changed the official policy though.

WOOHOO! Link me up Scotty!:teleport:

DOUBLE WOOHOO and a TOP shared with Stace!

I was just reading about the jeans...I'm disappointed, too. It won't make a difference to me, I will still dress up....but I am surprised they relented. Some people showed up for meals dressed in jeans and tanks anyway, now that DCL is allowing it...who knows what people will show up in?

Ohh pretty dress. Was this on formal night or something? Or every night? Good for her, I say! Hey, aren't people always complaining because people wont dress up? LOL

It was a bit "spooky" actually! We all got a big kick out it/her anyway.

I know some people don't like to get dressed up that much when on vacation. But, I don't mind. Seems like it one of the few times I DO get dressed up.

There was more to the story.....every night, even casual and Pirate, she wore a gown. One night it was blue, with a wig like Cinderella's hair. One night it was yellow, with her hair like Belle's....she insisted that the Head Waiter "escort" her to her table every night, and she came in well after everyone was seated. Before she would sit, she would twirl, so that all could see her dress flow. They would order their food, then ceremoniously leave the dining room to go have pictures taken. When they came back to dinner, they again were escorted. Then they would complain that their food was cold. Their servers would be wanting to clean up, to get on to their next assignment, or to bed, and these people would still be eating. She had a reported 20 some bags, and even though she won a very expensive item at the auction, charged it to her stateboard account, she tried to say that she had *zero* purchases to declare.
She was late getting back to the ship in Antigua (I think it was Anitgua) and they almost left without her, because she was shopping. She had so many bags that she had someone drive her to the ship in a golf cart. And then was mad at the ship's officers for bringing up the gangplank, closing the door, and almost leaving her! A real treat and a half, that woman was.

I'm disappointed in the jeans ruling because as someone else said now that they are allowing that what will people wear. Maybe if they had said jeans were ok in Parrot Cay it wouldn't bother me. Just can't see it in Triton's or Lumiere's. Oh well - we'll still dress nicer.

I would prefer that they allow nice shorts in the dining room and still ban blue jeans. In the summer, who really packs blue jeans?

That's what I was just thinking...jeans are way too heavy to pack!!

:flower1:Good morning cruisers!:flower1:

Happy Sunday!

Hope everyone is having a great weekend. Enjoy!

Jim, do you sear the filet on both sides? Or just one then flip & put in the oven? If you cook it that way, how is it done? Medium?

Wow... I think this is the first time since I found the DIS boards that I haven't been here in 2 whole days!!!! It has been so insanely busy... went to the "Leather and Lace Biker Bash" that our company sponsored on Friday night... about 500 people crammed in a room that fit about 100.

Yesterday was the longest day of my life... the downtown merchants association of the 'quaint' town that I work in wanted to capitalize on the Bike Week crowd in Daytona, and hosted its own Bike Rally... I was on the committee, and worked my tail off for the past 6 months to get this thing off the ground despite opposition from law enforcement, city officials, and so on.

We had no idea if this thing would be a success or a flop... closed the main street for a mile to all but motorcycles, had live music on 2 stages, food, vendors, the whole shebang... less than 1 hour into the event, we had run out of space to park bikes... over 10,000 people showed up! Not a single problem, arrest, or even complaint.

Today, my body feels like I got run over by every bike that came through town... I think I walked 20 miles, and rode about 50 on my golf cart... what a long day it was!! But it was great! So today, I'll sit here and catch up on what's been going on here....

Here are the full details:

Preheat oven to 400 and heat a skillet that can go into the oven on medium high heat.

The filet should be a room temp. Season it on all sides. I use pepper, garlic salt, and some italian seasons.

When the skillet is hot add a little oil. It should smoke. Please the filet in the skillet and do not move it. It will sear. Again, do not move it.

After 5 minutes, turn it and immediately put the skillet in the oven.

I will normally use a wireless thermometer to check for doneness, but I know that medium rare cookes about 5 minutes, medium 7 minutes. You can go well buy just leaving it in longer. The time will depend on how thick the filet is. Mine are usually 1.5 to 2 inches thick.

After the time, pull the filets out and let them sit for 5 minutes. The will continue to cook after you bring them out of the oven. Add a small pat of butter on them and you are good to go.

I have also done pork loin this way and it works great. Good luck.

Thank you, Jim...I was wondering that myself :worship:

Karen...the first couple of times that our small town had a bike rally, everyone thought it was pretty cool. Now, 10 years later, the town has implemented a noise ordinance due to the loud motorcycles, most of the businesses have signs that say "No Motorcycle Parking", and everyone complains about the bikers that come in droves every weekend.
:confused3 :confused3 Just what exactly did they expect?? Geesh...you can't have your cake and eat it too.
Personally, I'd rather the bikers stay, and the Town Council leave!!
