Hi! I'll be going to Disney for my 40th birthday with my husband and two kids-7 and 9. We are doing a split stay at boardwalk then switching to AKL on my actual birthday. I can't decide how to celebrate at all! Sometimes it's rope dropping mk, sometimes resting, sometimes a relaxing day at ak with some drinks at nomad lounge. I am curious how others would or have celebrated birthdays. I'm going in January if that helps!
 
Since you are switching resorts I would take it easy for at least the afternoon. Enjoy AKL for a while. Have a nice dinner at one of the signature restaurants preferably at a resort not the park. Maybe, go to Disney Springs for the evening.
 
Don’t overthink it. Book a nice meal at a place you enjoy and then just give yourself little indulgences during the day. You want a dole whip at 10am? Do it! Want to spend an hour just chilling and watching musical acts in Epcot even if it messes up the more efficient touring plan , go for it. We do a lot of bdays at WDW and the general rule is the bday person gets what they want. Doesn’t require any pre planning—just do what you feel like doing on the day.
 
I celebrated my 40th birthday at Disney as well and we stayed at Boardwalk too! We got a VIP tour that day as the ultimate splurge. we had a character breakfast at Cape May (back when it was still a character meal) and I jumped in all the character pics with my kids in my birthday ears (they have lots of great choices of birthday shirts and ears on Etsy). After that we did a seven hour tour of MK, Epcot, and HS. It was amazing but also exhausting. If you want something relaxing, I wouldn’t recommend it. If you are looking for something more relaxing, maybe a day at the resort followed by a private fireworks cruise. I am sure no matter what you do it will be wonderful.
 

Also going in January/early Feb to celebrate my 40th (my bday is at the end of Feb, during the princess half so I'm avoiding that. I'm going solo since my kids are 16 and 18 and will be a junior and senior and can't miss school. We thought about DH coming with me but I really love my solo visits! No one is too disappointed since I will be home on my actual birthday date)

If it were me in your situation, I would probably want an early lunch at Sanaa after moving over to AKL, then just have a relaxing day enjoying Animal Kingdom. I would definitely be hitting Nomad Lounge, and maybe dinner at Tiffins (it's excellent, if you've never been)
