What will they do? 2 meals paid & 2 meals OOP? Which would be "free" the cheapest, or the most expensive?

You tell them who's meals will be on the ddp. Obviously it makes sense for you to say the most expensive... Also, if everyone isn't getting a dessert... make sure that the person on the ddp is the one that orders the dessert... no matter who eats it!

I think you have to tell the server which people are using the DDP and which are not before you order.

It would be tacky for Disney to choose the 2 least expensive meals as the ones covered by DDP.
It would be tacky for guests to switch plates around so the ones covered by DDP are the most expensive, but get handed off to people dining OOP.
For the finish, I would ask the server for four utensils so everyone could have a taste of the DDP desserts. I don't see any harm in that.
