3 Day quickie pre-cruise trip to the World, what are your MUST-DOs

So, we are potentially going to book a quick 3 days at WDW pre-cruise in Fall 2016. Last time we were there, we had a full, solid 5 days. 3 days seems like it will be rushed to me. I just have 1 daughter who will be 8, almost 9 by then and one big, non-Disney loving "kid" (DH). We ARE park hoppers and would most likely want to visit all the parks...
