2 day stay- park to park ticket vs (2) one park, one day tickets

With 5 people, a 2 day one park/one day is significantly less than a 2 day park hopper? Thoughts? We will be staying at CBR so we will get in early, but no express pass. Could we plan one day than the next or is it too much of a hassle

One big reason to get the park hopper is to be able to ride a Hogwarts Express. If you are ok with missing that, the one day at each park could work?
