2 adults park to park for 2 days after being away for 8-9 years!

Hi! My husband and I haven’t been to Universal in 8-9 years. We are going next week and have 2 day park to park tickets. We have no desire to do everything. We are on a kid free vacation and trying to relax as well as have some fun. We have a list of must do attractions and I am trying to decide on an order. As well as the ones listed here we want to do the Hogwarts Express but I am not sure what would be the best time for this. Also, single rider lines are not an option because we want to ride everything together (at least the first time). No early entry as we are staying at AKL and also no express pass. We have a Margaritaville gift card we hope to use while there. Would it be too much of a time sucker to use it for lunch one of the day or should we save it for after park closing to maximize our time in the parks? Besides that we plan to pack most of our other snacks/food/drinks. Please help me make a plan. If there is anything that you consider a must do for adult couples (we drink alcohol) please feel free to make suggestions. Thanks!

I'd definitely save Margaritaville for after park close to maximize park time.

We haven't been back to US/IOA since Diagon Alley opened (we're going next August), but from what I remember, we experienced low crowds during our September trips, especially on Tuesdays and Wednesdays.

Hogwarts Express never seems to have much of a line. Remember that it takes you from one park to the other, so just do it when you are ready to switch parks.
 
Although I also love ET, I'd put Despicable Me and Shrek above it on a priority list.
 

Thanks for the suggestion! I remember ET from the last time we went and I loved it, lol. I have done shrek but thought it was just meh. Not really a fan. I haven't done Despicable Me. Did it replace Back to the Future? If so....I don't really like that kind of ride.

Simpsons replaced Back to the Future. Despicable Me replaced the Jimmy Neutron ride.
