We have a party of 11. How does paying the 18% gratuity work and do you have to pay it on the quick service?
 
No gratuity at QS locations. TS locations will add it to the bill, and will almost always point out that they did so. If memory serves, it is 18% of the pre-tax total. It is worth considering what you'd normally tip in case it works out to be a little bit more than that.

My experience has been different with parties of 6 (or more), they hardly ever tell you it’s been automatically added , check your bill
 
QS locations have you go to the counter to order. There are no gratuities on QS that I have ever experienced in 50 years at WDW! There are no reservations at QS locations. Some QS will bring you your meal even though you order it at the counter but that is not a tip situation.

If you have table service with someone taking your order and then bringing you your meal that is typically an ADR. At that point expect 18% prior to tax. You are able to give a higher tip if you choose.

Allears.net has menus and clearly shows QS vs sit down menus. An ADR is an advanced reservation you make online.

Goofy's Kitchen comes to mind. Refilling drinks one time and vanishing is not exactly amazing tip-able quality service since it's a buffet.

Thankfully my experience at Storyteller's Café was completely different and glad to tip even though it's also buffet style breakfast.

Most WDW restaurants pointed it out to us, but not all.

If there are serious issues with service ask to speak to a manager before leaving and you might be able to adjust the tip.

We have double tipped so many times at Disney because they rarely ever point it out. I suppose it's our own fault for not checking the bill while still at the table but when you're with a large group there's so much going on that it's hard to take the time out to go over things. Plus when you're treating people it's awkward to then scrutinize the charges like they're a big deal. To me, it feels shady when it isn't mentioned, like they know they stand a good chance of ending up double tipped.

Flip side: Tipping included for 6 or more (whatever %) is such a norm- dates back to the ‘90s at least and is often printed on the menu- that it’s hard to put it out to more than over exuberance on the part of the guests. Which would make me more indulgent as in I must of been having a good time to let that slide by 🙂

Nope, that's just a bad financial habit. It is not rude to make sure your charges are correct when treating people, it is fiscally responsible. If the people you are treating find it rude or weird they are not people who deserve to be treated as they don't respect the work you do to earn that money.
 
I do not believe in stiffing the wait staff. I was going do it once at Disney. At the time If you are on the dining plan, the 18% was automatically added. So my wife and I were at a buffet, the first question was were we on the dining plan and of course we said yes. He took our drink order, brought our drinks, and totally disappeared...I mean no cleaning of used plates, no refills, nothing. We had to flag other staff for drink refills. We know he existed as when we went up for desert, when we came back to the table there was the bill. I was so angered that I was going to complain to the manager but my wife did not want me to make a scene, so I let it go (intentional reference).

ALWAYS check your bill. To this day I kick myself for adding a tip to a bill that already included one. We were out celebrating my daughters HS graduation and I wasn't paying attention. And yes, it is shady when the restaurant doesn't point it out.
 
Double tipped at least twice many years ago- hopefully won't forget again. I got this, no, I got this (paying bill), distracted a bit. Forgetfulness with it all.
 
The pre-tax bit is a good note because a lot of people actually end up tipping less because it’s often done post tax.
