At Animal Kingdom:
(1) Take the very calm train ride to Conservation Station and hang out with the sheep and goats. Fun! There're also demonstrations there, although I don't know if they're scheduled.
(2) Na'vi River Journey is a very calm boat ride. I love this ride. Very serene and pretty.
(3) Also, if you didn't mind spending a few $, the Caring for Giants tour is just fantastic. An hour of behind-the-scenes amazement with elephants. We loved this tour.
(4) Loads of street performers at Animal Kingdom--all of them excellent.
(5) I guess Flight of Passage is too much? I'm only asking because you mentioned Soarin'. Flight of Passage has a bit more movement, but it's not a jerky or rough ride at all, however, there is the sensation of swooping, so don't know if that's an issue. IMO, it's not just the best ride at all the WDW parks, it's the best ride ever. Yeah, I'm addicted!
(6) After dark: Rivers of Light, Tree of Life Awakening, and walking around the bioluminescent Pandora--all fantastic. And the gaming arcades in Dinoland (almost forgot about these).
That's just Animal Kingdom, and I didn't mention several things that have already been mentioned upthread.
Really, there is so much non-ride stuff to do at WDW, it'll be easy to find things.
At DHS: Beauty and the Beast is always fun, and I still enjoy Voyage of the Little Mermaid (I don't care what anyone else thinks!).
Haunted Mansion is okay? I could ride that like 10x in a day!! And Peter Pan as well. And don't forget the riverboat, the raft to Tom Sawyer's Island, and walking around Tom Sawyer's Island. And, you know, the Country Bears, a childhood fave which I always see because it's just not Disney without it!
And, of course, just walking around WDW is a pleasure. And sitting and people-watching is too!
