Quick question-
If my 13-year-old comes in line with us and decides not to ride, will they let him go to the chicken exit alone? Or does an adult need to go with him? He’s perfectly capable of waiting for us alone and I’m fine with that, but I wasn’t sure if Disney allowed that. We know this will happen for at least Tron, Everest, and Guardians. Pretty sure he will ride everything else.

I think your scenario will work fine if you're doing the standby lines. I'm not sure how that works if you have LLMP or LLSP for those attractions. If he's not riding, you might not want to purchase the LLs for him. But if he doesn't have the LL, I don't think they'll allow him in line with you.

This is correct - to enter and walk through the LL line with you, he'll have to have a LL as well. It sounds as though ride vs. not might be a boarding dock decision, so that will work out.

As long as they stay out of trouble and remain behaved, they’ll be fine waiting at the exit worst case scenario.

I was able to do a ride switch with our 14-year-old teenager. As we were being assigned, I just let the CM know and it was no problem. Me and teen stepped through the ride and then after DH and other teen rode, I then rode solo immediately after.

Can he go get a drink/snack, check out a gift shop? That way if he knows he’s not riding he can do something else.

If they keep it together and behave, hanging out by the exit won’t be an issue from what I have seen. I've seen it before a few times.
