1 person in our party in 2 resort hotels, same night?

Situation:
Me, DH, and adult daughter with Poly resort package for three nights
on the 3rd night, two of my daughter's adult friends coming to do MNSSHP with her. I am paying for a Pop Century one night room only reservation for them
The same MDE person can't be checked in to two hotels at once
I can't break up the Poly resort package to put her in Pop on third night (as far as I know)

Goal:
I want her to be able to hang at the Pop pool with her friends if possible

Idea:
Can she make a 2nd Disney account with her middle name and I add that account as a guest in the Pop room?

You could follow thru with your idea and Disney won't care as long as she is a registered guest at the resort room and pool that she is using. You will pay the extra charge for a third adult in the room. And it can get confusing trying to keep things straight such as which identity has tickets and charging privileges associated with it. Plus that alternate ID will remain in MDE for all accounts associated with it even after the trip is over.

You can be on two reservations for the same night. It might give issues with the magic band working but can be done. I did it with husband when we got married at Disney. He was on my reservation for our week stay including the night before the wedding, but he also got a different room for the night before so we didn’t see each other. Didn’t have any issues
