(1) 9 inch low carb pie crust--prepared. I use MiniCarb brand pie crust mix. It has 1 gram of carbs per slice. Actually it has a little less than that the way I make it because I use only 1 cup of mix instead of the 1 1/4 cup called for on the box. I bought the pie crust mix at Woodforest Walmart in Houston. I can't find it in my area of Michigan <b>Pecan Filling</b> 1 1/2 cups Maltitol 1/4 cup butter 1 large egg 2 large egg whites 1 tbsp vanilla 1 t instant coffee 1/2 cup pecans Warm the Maltitol and butter until the butter melts. Add remaining ingredients except the pecans. Pour into pie shell. Top with pecans. Bake at 375 for 45 minutes or until done. My mother in law figured the net carbs for the entire pie including crust to be 12.6. I haven't checked her math. Warning about the pie crust. This is not a light and flaky crust. It has a texture more like that of a graham cracker crust but it is tasty.
