What should we do on Friday before our cruise?

We are sailing on the Fantasy on July 20th, 2013. I think we will fly into Orlando on Thursday and have all of Friday to do something before getting on the boat on Saturday. We could stay in Orlando or head over to Port Canaveral and stay there Thursday night.

We are big WDW fans and have done a day at one of the parks before a cruise, but with all the FP changes, the busy time of year, and the heat, I am thinking it's time to try something else.

A couple of thoughts are SW, or Discovery Cove. If we did DC, we would skip any pricey excursions on the cruise, but that is supposed to be an incredible dolphin experience. Universal is a possibility too. We have only been once.

Thoughts? Suggestions? More unique options?
