Try to get the last seating at the Rose & Crown in Epcot and ask for an outside table when you arrive, then enjoy Illuminations from there (eat slowly and time it so that you're having dessert when Illuminations begins).

My dh and I weren't celebrating anything but each other on our last trip and it was wonderful. We walked hand in hand and had a ball. He loved MGM and Epcot and he's severely Disney impaired, so that's really saying something
Rent a pontoon boat and sail around one of the lakes.
See La Nouba, the awesome Cirque du Soleil production, my husband was absolutely enthralled by this show.
Go dancing at the Atlantic City Dance Hall on the Boardwalk. Spend an evening strolling the Boardwalk and watching the street performers.
Watch the MK fireworks from atop the California Grill at the Contemporary.
Get a glass of wine (or a cup of tea) and sit on your balcony and gaze into each other's eyes. There are so many fun things you can do.
