Tie-Dye cheesecake at POP

Does anyone have a similar recipe?

I'm wondering how they get the cheesecake to bake evenly and completely on top of the red velvet cake without either burning the cake or leaving the cheesecake gooey.

The velvet cake has to be baked first, and then the cheesecake poured on top and baked again...doesn't it? I don't care about all the food coloring, but I could leave that out.
