The What's for Dinner Thread- June 2012 (recipe index in OP)

Had "the talk" with the twins yesterday. It went better than I thought it would. However, comments they both made really brought home how different they are! I was laughing inside at some of the comments they made! How I love my kids!

Pigletgirl ~ I have a good recipe for ribs in the crockpot. Sorry I didn't see this earlier. If you still want it I will get it for you.
Yes, if you are able to do so, I would so appreciate! Baby back ribs were on sale and I would like to use them. I've seen such varying reviews on different recipes, that I'm not even sure which one to use.

Off to bible study tonight! Grilled cheese and whatever else is WFD.

Brandi- I am drooling all over the screen!

Dinner is settled Grilled pork chops. a sweet potato for buddy, baked and finished on the grill and a green veggie. I made a salad so I am pretty much good to go until I have to fire up the grill. Buddy is at the fiels I think so late dinner.
 


So I've been MIA for a few days. Less than a week until our audit. This is going to be the biggest test of our relationship. We've been through both of her parents going insane and suffering long and senile deaths, but I think this audit is going to be the biggest test.

Combined with the fact that she just found out that the Auburn Speedster she has been wanting to buy for the past week or more was just sold to someone else, I'm going to have a very moody Fran on my hands. Her wounds are sort of healing, but she keeps having new ones open. I missed Monday's Dr. appt, but that was a good thing because he had to do a debridement that would have sent me reeling. We were supposed to go out to DL for two nights tonight, but she was in too much pain so we skipped that. It's OK, the points we used to book the reservation were in holding so we would have eventually lost them anyways.

I thought we might go out tomorrow to check out some new stuff, but it looks like that won't happen since she is so depressed about not getting the car, but at least I had a nice steak for dinner tonight. She passed on dinner and I just made her a sandwich before going to bed. Hopefully this will all pass and soon we will be happy again. However, I really enjoyed my steak dinner and am not going to let her depression get me down.

Now all we need is to find a piano player for Sunday's rehearsal, we have an ad on Craigslist, but I'm not sure at what point to either cancel the rehearsal or go with the no pianist!

hugs my friend. I truly hope that this turns out to be one of those experiences that makes your relationship stronger. I have no idea how hard it must be getting ready for this audit.

Sorry to hear that fran did not get the car she wanted but she will perk up.:hug:

Well night 2 of the rodeo is finished. Tonight is night 3. We have had beautiful weather with no rain so far. That in itself is a miracle. But we don't get home till almost midnight and this old gal is dragging this morning. It's all so much fun though. Tomorrow we are taking Ethan and Liam. We can't wait. Liam will either love it or hate it.

WFDT ~ Tonight I am eating an "elephant ear" at the rodeo. YUM!!! So off of the diet but I don't care, once a year is ok, right?

Here you go Pigletgirl

This is my recipe so you can do what you want, but this is how I do them.

Crockpot BBQ Ribs

Baby Back or Country Style Ribs
Garlic powder
Ground black pepper
1-2 bottles of BBQ sauce (cheap/Kraft is okay here, since it cooks down so much - you just need enough to cover however many ribs you have) I have also made my own, so use whatever you like.
Optional: dried onion flakes

Rub the boneless ribs with a little garlic powder and black pepper.
Put just a 'little bit' of water in the bottom of the crockpot. (Just to keep the ribs from sticking to the bottom as they first heat up in the sauce - maybe a 1/4 inch of water.)
Pile in the ribs.
Cover all with BBQ and sprinkle in some dried onion flakes if you like.
Turn it on low and cook it for 8-10 hours.

When you get home and pull those ribs out they will be falling apart tender - with BBQ flavor all the way through.

I love these!! So simple and oh so good.

Our kitty Boris is going to his new home Sunday. I am so incredibly allergic that I cannot keep him anymore. :sad1: He is such a sweetie, but the friends who are getting him are great. I trust them completely. Just makes me sad. We may get a small dog (if allowed) once we're moved and settled.

WFDT - ??? Not sure. Probably out somewhere. California Pizza Kitchen perhaps? We'll see once DH comes home.

Hi all, rough day today. Arline fell while I was at the Chiropractor this morning. Fran called the paramedics to help her get up but she declined on going to the hospital. She keeps insisting that she can live independently but this was her second fall in about three weeks. Her apartment should be ready by Monday and we'll get her moved in out there and see what happens. Fran has been looking into "I've fallen and I can't get up" alarms. The problem I've noticed with older people is that there is a problem when they say they have no problem. Those who admit to and cope with their shortfalls are fine, it's the ones who don't notice the problem, either from senility or oblivion are the ones who get in trouble.

On the wound care front, Fran is healing very nicely. Her skin grafts have taken well and filled in her leg so that there are only small holes. The oldest ones are healing and all the new "pockets" are opening up to drain due nasty fluid and begin healing. Hopefully next month she can take a shower like a normal person and not have to wrap her leg in Saran Wrap.

WFD? Jambalaya.
 
Alison - the Aussie Government almost recommends that the aged community install a personal or medical alarm system in case of an emergency. It's an accepted part of the community here that if an elderly family member wishes to live independently that their children get them an alarm system. Peace of mind for everyone. I hope that Fran finds something and that Arline accepts it.

It's not quite lunchtime here. WFDT? I have no idea and haven't thawed any protein either. So, it might be soup again.

Is this like fried dough? I love that stuff! With butter and sugar! WE have a Fireman's carnival here every year 9Actually most towns around her have one) and there is always fried dough offered with several toppings. Our town has the best! And i am an expert!

Allison- Arline may be afraid to admit that she has some deficits. You are right there is a problem but it may take time for her to realize that accepting that she may need help does not take away her independence. It actually will give her more. My Mom had a hard time accepting that she needed help but once she did her quality of life was way better. I am here if you want to talk. I hope that Arline is okay tomorrow. She may feel the fall more then,

Monday - Artichoke and Spinach Lasagna
Tuesday - Chicken Salad
Wednesday - Pork Chops and salad
Thursday - Chicken Enchilada's, Re-fried Beans
Friday - Beef Brisket, baked beans, and coleslaw

Alison ~ I am so sorry to hear that Arline fell again. I agree she needs some help. Either assisted living or at the very least an alarm that she can wear. Such hard decisions.

We had a wonderful weekend. The boys loved the rodeo and they were so good. There was a carnival there so before it started Ethan and I went over. OMGoodness $20.00 doesn't last long these days. We both rode the Farris Wheel and he went down the big slide, played 2 games and that was it. I just about died. But he had fun so that is all that matters ...... but really!!

Father's day was spent very low key. After church we went for breakfast then just lounged the rest of the day. We were going to the Country Club to golf but we had 30+ MPH winds so we passed. It was almost 100 out to so it was a day for being inside. The kids (not Matthew - he called) all came out last night and brought dinner. So a good time was had and I loved having my grandbabies there. I got to snuggle all night.

I need a nap! This weekend was crazy. Friday I took my van in for service, oil change and to check on brakes, 11 hours and almost a $1000 later and it still isn't finished. :headache:The front brakes were shot and needed new everything. The back drivers side brake is having an issue with the caliper so they disconnected the parking brake so I could get it back for the weekend.

Saturday morning was crazy with getting up and to the pool for the swim meet by 5:30am. My little DN wasn't having a good morning and had "glass" in her foot and cried and cried about it. No one could see or find anything but finally one of the coaches put some foam padding stuff and a band-aid on it and it was all better. :rolleyes1

Then we were running late and got to the karate tournament 15 minutes later than requested but it was all good. That is until the tears started again because she didn't know what she was supposed to do. After pep talks from her Master and one of the judges she did great and got third place in Forms. Then she ended up getting 1st place in Sparring. She was nervous about that as well, no tears this time though, worried she wouldn't know what to do but when the ref blew his whistle she went right after the other little girl. :rotfl:

She was so funny, all the way home she cradled one or the other of her trophies in her arms.

The rest of the weekend was pretty quiet. We did do some shopping yesterday. I am giving the girls a new bathroom makeover for their birthdays and Lane Bryant has their undies on sale, the old ones are getting a little ragged. ;)

The food Saturday was good. I had salad, broccoli, a little baked cod and prime rib. Delicious!

Dinner last night was grilled porterhouse steaks, grilled pork chops, roasted cauliflower, steamed green beans, sauteed portabella mushrooms and some kind of weird 0000 noodle. We topped it with a 1 carb bruschetta. Pretty good!

Dinner tonight is grilled chicken breast and salad. I have to pick a veggie out. Buddy will probably want a cucumber and onion salad too.

Dinner tomorrow night is somewhere in Mystic. I cannot take Kady on an ice cream trail.............I cannot be trusted to stay away from ice cream. Marisa is joining us and we are heading to Mohegan Sun casino for some arcade fun, then lunch and dinner in the area. The next morning we will go to the aquarium. There is the new Titanic movie there. Dinner will be at home. Wish me luck.........I generally stray from my diet when I am not home but Marisa is not going to let me. She sicked Anna and Erica on me Saturday to make sure I refused wine and additional goodies. And there was a wedding one needed wine that was it!
