    Sea Bass Recipe
    "Branzino in Cartoccio"

    This is sea bass PER PLATE:

    1 sea bass (approx 5.5 oz)
    1 grease proof paper to make papillote - parchment is fine
    3 ea cilantro leaves
    5 ea lemon zest

    Ginger Orange Sauce
    1 cup orange juice
    1 T ginger, finely chopped
    1 T cilantro
    1 orange, zested
    4 oz butter

    Reduce orange juice by half. Add ginger and simmer for 1 minute and remove from heat. Whisk in butter and stir in cilantro and orange zest.

    Cust grease proof paper down the center. Fold into 2.5" folds. Tie the ends with butchers string. Upen up the center to create a pocket. Place sea bass into pocket. Spoon 3 T of Orange sauce over it. Garnicsh with fresh cilantro and lemon zest. Place in oven at 300 degrees for about 10-12 minutes.

    Chocolate Souffle

    Makes 6

    3 T butter, plus more for buttering the souffle cups
    6 T sugar, plus more for dusting the souffle cups
    1 c milk
    3 T all purpose flour
    3 T Dutch process cocoa (I used a blend)
    2 oz (2/3 cup) semisweet or bittersweet chocolate, melted
    4 eggs, separated

    Preheat oven to 350. Set a full kettle of water on to boil.

    Butter six 4 oz souffle cups and dust with sugar. Set aside. Bring milk to boil in small saucepan. Meanwhile, melt the butter in a medium saucepan over medium heat. Add flour and cocoa to the butter and beat with whisk until it has a smooth, paste-like consistency. Reduce heat and cook for 1 minute.

    Slowly add the hot milk to the butter mixture, whisking until smooth. Blend in melted chocolate. Let cool for 5 minutes, still in egg yolks.

    In a bowl, beat egg whites until frothy. Slowly add sugar, one tablespoon at a time, until stiff, glossy peaks form. Stir a heaping spoonful of egg white mixture into the chocolate, then fold in the remaining whites until just combined.

    Pour the batter into prepared souffle cups. Place cups in a large baking dish and add enough boiling water to reach halfway up the sides of the souffle cups.

    Bake for 20 minutes.

    Vanilla Sauce

    1 1/4 cups heavy cream
    1/4 vanilla bean, split lenghwise (I used 1 t pure vanilla and it was fine)
    3 T sugar
    2 small egg yolds

    Bring cream and vanilla bean to a low boil in saucepan over medium heat.

    Combine sugar and egg yolks.

    Add 2 spoonfuls of boiling cream to egg mixture and stir well, then pour bak into the remaining cream and continue to cook over low heat, stirring constantly for 3-4 minutes.

    your front door is gorgeous. Even more so in person! Of course that was just me driving by a few weeks ago. Sorry I have been MIA. I seem to take summers off from Dis boards. Too hard with the little ones running around! But now I am back.:thumbsup2 Have one World trip planned and the cruise in over a year. That is still so far away!

    First off I have to say Ally looked so cute for her 1st day of school!!

    Thank you so much for posting the recipes! We loved our Palo meal on the Dream in June. And our waiter put both the chocolate and vanilla sauce in our souffles!! :worship: It was soooo good. I wasn't even going to order the souffle - I love creme brulee. So of course he brought me both ;)

    Can't wait to try those recipes.... and can't wait to read more about your trip!

    I am so proud of you!!! It is very important to NOT disappoint the servers. So if they bring you multiple entrees/apps/desserts, you MUST eat them all!!!! Good job!

    March 31 we woke up to a child who aged an entire year!!!! After eating as much as I did, I'm sure I aged about 5, or was it that I grew 5 sizes? Either way.......

    And what better way to spend a double digit birthday?

    So off we went to Parrot Cay for some fun with Ally's friends! We arrived a bit early so we strolled along the Promenade. No, that's Prah-meh-nahd. Not prah-meh-nade. Didn't you watch Kate Winslet? She would never prah-meh-nade...... That was Leo.... silly....

    So relaxing down here on the covered deck..... and the chairs were comfy too. Cushy, instead of plastic beach chairs.....

    After a leisurely stroll - no, that is leh-shur-ly, not lee-shur-ly...... C'mon, we are the McSparklesons!!!! We stroll on the what? Prah-meh-nahd. How do we stroll? Leh-shur-ly.

    Now you've got it.....

    Now let us in to breakfast!!!!!

    Don't know what I ate, and don't really care. It's kind of like the character meals at WDW, you go for the what? NO! Not the prah-mah-mahd..... you go for the characters! Not the food.

    But either way, Ally had all her friends there, especially her "boy" Willy.

    You just can't beat that service!!!! Love that Willy, even though I couldn't understand half of what he said the entire cruise. I just nodded my head a lot at him......

    Cute update! Happy Birthday Allie! :cheer2:

    The only thing missing from the prahmanahd was that gorgeous hat she was wearing in the movie. Shorts just don't compare to it! :laughing:

    I noticed in the one video you trusted Ally to take a picture with your camera though? Is she starting to get the shutter bug fever too?

    Gotta love some Magnum PI! I was a tad young for that one, but boy was he smokin when he was on Friends! :lovestruc

    Magnum Mickey PI....... he never really did it for me - Tom Selleck that is. But Mickey is HOT!!!!

    I just added giant hat to my packing list for next cruise....... Jeff will thank you for that. ;)

    AFter hangin with our pals at breakfast, the McSparklesons were whooped!

    So off we went......

    To Deck 10 to pop a squat in the sunshine, right by the rail so we could......

    watch the sea go by!

    Jeff was really looking forward to lunch this day, even though he had read some not so great reviews.....

    Eh, it was okay. We didn't end up with food poisoning, so I guess that is a plus. But it wasn't worth writing home about either. So if you didn't get my postcard, that's why..... ;)

    I stuck with Goofy's Galley for a samich..... Brie, bacon, and tomato. Yummm!

    I believe a nap may have been in order after lunch.

    Soon Ally and I had to head back to the room to shower for our Tea Party with Alice and the Mad Hatter. I was so excited for this, because it was going to be a mother/daughter tea for us.

    But first a little message from Jeff.....

    Yes, there were some daddys there, too, and if Ally had been younger, Jeff would have gone with us. But as it turned out, I'm glad he didn't come this time. Let's just say, Ally is "so over that."

    We forgot our tickets for the tea, and when I reserved our spots, they were the last two available! Whew! The gal at the door didn't question me though, and we made our way to a table up front in Studio Sea.

    Soon Alice came out and introduced her "mad" friend......

    And Alice explained to us that her other friends, the White Rabbit and the March Hare, couldn't make it, so they would need stand ins to help them with the tea......

    Well, I'm sure the flashing "Happy Birthday" button that Ally was wearing didn't have ANYthing to do with her being chosen......:rolleyes1

    And since this day, she swears she will NEVER wear a flashing button again! I'm just glad my daughter does not want to be a flasher.....

    Can't you just see the excitement on her face! She was THRILLED at being chosen!!!

    I'm not sure if it was the floppy ears that she hated? Or the whole thing. I"m thinking the whole thing...... She does NOT like to be the center of attention like that, and I was actually shocked when she raised her hand and then happily joined Alice at the table.

    Afterwards, one of her friends from Oceaneers Lab came up and said, "Ally, that was so cool you got chosen on your birthday!" and Ally said, "Oh, I hated every minute of it!" :rotfl2:

    HOld on while I transfer some more money into her therapy account......

    OMG! You are sooooo funny! I have enjoyed reading your TR the last few days! I am sooo excited for our first Disney cruise with our DS 5 in January. I know still a long way off but reading your report gets me so excited I can hardly wait!
    What will I do when your report is done!!!!
    Your home is absolutely beautiful and I can't wait to try out those delish recipies you have shared!

    What will YOU do when my report is done? What will I do when it's done? I feel like the trip is not really over yet because I get to relive it by writing this. When it's done, well, I guess then it will really be over :sad2: so I am stalling......

    I have a WDW trip planned for December and then another cruise in March, and then the DISmoms cruise in May and then MAYBE another family cruise in July/August, 2013 with Ellen (podsnel) and her family!!!! Jeff doesn't know about that one yet..... :rolleyes1 I think I may have to give up my Alaska or TransAtlantic for that, but I'll do it!!!! :thumbsup2

    aww man stupid computers have made me miss so many trip reports.. and for some reason work looks down on vacation planning/revisting.

    Oh ya rub it in... March 2013 Carnival Breeze 8day... just saying you bring the Sparkle.. Ill bring the Kahlua! :rolleyes1

    Btw your home is ah-maze-ing... like Kate would say not amazing like Leo LMAO. and any time you want to recreate or just create.. or cook, heck microwave some food my home is tu home errr casa!

    It's funny cause I do not cook. Until we bought this house. I actually now will get the crock pot out, dump in the roast, top with cream of mushroom soup, 1/2 can of coke, and a packet of Lipton onion soup mix and VOILA! I'm speaking french! Yup, I'm a real gourmet (that is gor-met)......

    As for all your other comments....... :rotfl2:


    I think that is a look of "you mean all this money could be mine but you spent it all on my therapy????":rotfl2:

    What a fun birthday! And yeah that sushi did not look all that appetizing. But the rest looked amazing. I think I will go make myself a a bacon, tomato and brie sandwich tomorrow. That sounds yummy. Was the tea workth it? Especially if you did not get chosen. I'm trying to fugure out if Abs and I would enjoy that. Hmmm.

    I do not think I would ever do it again. I was not impressed with it at all. It was cool that Ally was chosen, but that was it. It was Alice and the Mad Hatter explaining how to take tea, but it was chaotic just like the tea in the movie. I can't explain it but it was chaotic, like it was supposed to be, but to the extreme. I can't imagine how kids would enjoy it.
