Which is better and why? I am not a sushi eater but two others in my party are if that makes any difference.

For sushi, your only real choice is Tokyo Dining.

We have been to both, and prefer Teppan Edo. It is a 'must-do' for our next trip. However, we were able to view Illuminations from Tokyo Dining.

Does either have chefs who do on stage cooking?

Teppan Edo cooks at your table. It is a nice show and the food is great.

I prefer Tokyo Dining. Atmosphere is a bit calmer and the service tends to be pretty good. We have places like Teppan Edo around here so really notice the inflated prices there, and I haven't found the food to be any better than average.

We have eaten at both and enjoyed both.
At Tokoyo Dining the atmosphere was definitly quieter and more peaceful. It is a very pretty setting. The service was outstanding and the food was good. I do not eat sushi either, but they do have an extensive sushi menu.
However, we prefer Teppan Edo. The food is outstanding and the chef cooks "Teppan Style" at the grill you are seated at. The seating is at tables for 8 surrounding the teppan grill. So if you are a party of less than 8 you will probably be seated with others, if this matters to you. The meal preparation is really a nice show.
Many here on the DIS are negative towards Teppan Edo because it differs from their Japanese Steakhouses near their home. They do not include soup, salad or fried rice - which is a Chinese dish, not a Japanese one. They serve plain white rice. If you have a Japanese Steakhouse near your home you may want to think of this. In my experience, Teppan Edo is far superior to those near me.
We love it and it is a "must do".
    Enjoy

As stated, Teppan Edo has chefs cook in front of you. Tokyo Dining does not.

I love Teppan. The food is delish. At teppan edo, the sushi lovers in your group can get sushi as an appetizer. Thats a nice compromise if you had your heart set on hibachi.

Teppan Edo does not take Tables in Wonderland discount but does take annual pass discount. Tokyo takes both.

I am not a sushi eater either but Tokyo Dining has plenty of "cooked" food too! We far prefer it to Teppan Edo now since we have plenty of hibachi "shows" locally, that are more reasonably priced.

Also, I thought Teppan Edo only offered the AP discount at lunch...

We prefer Tokyo Dining by far. We thought Teppan Edo was terribly overpriced for the kind of hibachi cooking that can be had just about anywhere. (I'm not much of a fan of hibachi cooking anyway -- lots of show with nothing but sliced and diced veggies and meat with tons of goopy sauce once the show is over.)

Tokyo Dining has good sushi and some other nice entrees and a much quieter and more relaxing ambience. We've been seated in the outer area with the windows as well as the inside area near the sushi bar. Both are nice.

I forgot to mention we will have a 9 y.o. girl who loves sushi, but will most likely need the entertainmnet value of the cooking "show", so we will most likely do Teppan Edo I think. Thanks everyone for the help!

I'm in the same boat as you because my 8 year old, Japan-obsessed DD LOVES sushi. We have ADR's for TE but I'm concidering switching to TD. I'm still not sure. We're on the DP so I will most likeley pay for the sushi OP anyway. Still can't decide.

We have only dined at Teppan Edo....DH and both DD11 love it there, I and DD9 on the other hand, can take it or leave it. The hibachi style restaurant is fun and you can meet some really interesting people at your table too. As it has been stated before, if you have a sushi lover in your party, then you can order it as an appetizer, however my DH and DD11 swear by the BBQ ribs appetizer...I think that is the reason why they have to go there every trip.
