SCHOOLBREAD- Tell me all about

    My ds5 is type1 diabetic. Can anyone tell me more about the schoolbread, like ingrediants or carbohydrate counts on one? Does it have a bunch of sugar?:scared1:

    Here's the recipe for School Bread from Epcot - hopefully you can tell from the ingredients if it's A OK for him or not :goodvibes

    Kringla Bakery
    Norway Pavilion, Epcot

    Ingredients
    2 pints water
    3 ounces dry yeast
    3 1/2 ounces sugar
    2 1/2 ounces butter (melted)
    1 teaspoon cardamom
    2 pounds flour
    1 whole egg
    8 ounces shredded coconut
    12 ounces vanilla custard (recipe below)

    Method

    Heat water and butter to 95 degrees. Mix flour, sugar, cardamom, yeast, and egg together for five minutes until dough is stiff. Form it like a ball and place in a bowl, cover with plastic wrap and let proof for 45 minutes, or until dough has doubled in size. Roll the dough out like a sausage and cut into five ounce pieces. Roll each piece into a ball and put them on a non-stick sheet pan and let them proof for 30 minutes. Bake for 15 minutes in 375 degree oven. Let cool.

    Mix powdered sugar and water (use small amounts until proper consistency is achieved) to make icing and place in shallow pan. Form hole in bread using finger. Dip bread in icing (hole side down) and sprinkle with shredded coconut. Using pastry bag, squeeze vanilla custard inside of hole and swirl at top for decoration.

    Vanilla Custard
    Ingredients

    1 2/3 cups milk
    1/4 cup sugar
    1/4 teaspoon vanilla extract
    4 egg yolks
    1 tablespoon corn starch

    Method

    In heavy saucepan bring milk to a boil. Set aside. In bowl, beat eggs, sugar, and vanilla until the mixture doubles by volume. Add the hot milk a few drops at a time to temper the eggs. Mix well after each addition. Place in metal mixing bowl and place over double boiler. Dissolve cornstarch in a little water and add in a thin stream while stirring constantly until it thickens to proper consistency. It must not boil. Cool by placing pan in ice bath.

    I am a type 1 diabetic and I have had the school bread many times. Though I don't eat the entire thing myself. I think its to big to do that anyway. As long as his glucose levels are pretty much normal he should be able to have some. I would recommend it, it's delicious.

    This coming from a diabetic with a Hemaglobin A1C of 5.2 at my last doctors vist.

    Since he is only 5 and I have 4 kids I thought maybe they would each have a couple of bites. He just went on an insulin pump and I will just need to adjust for the carbs. How did you figure your carb count? Is it comparable to a creme filled donut?

    BTW, my son's A1C was 6.8 at his last visit.:cool1: Wow.......5.2 that's terrific.:thumbsup2

    He has only been on it a week and a half and so far his b.s. is either good or extremely high with large ketones. We are supposed to be able to change his infusion set every 3 days, but we haven't made it past 2 days yet. For some reason or another, the pump keeps detecting a blockage and not delivering insulin until I change out everything. Some days are really scarry.:scared1: On his second day of being on the pump, he was outside riding his bike and his tubing got tangled up in a bush.:eek: The next day he was in the kitchen swinging it around by the tubing.:rotfl2: It's was not funny at the time, but it is now. I think his doctor fell off his chair laughing when I told him that story.

    Are you on the pump now or did you go back to injections?

    Wow I can't believe he was entangled in a bush. But, with the way they are made I can believe it.
    No, I am no longer on the pump. I didn't last a month on it. I am back to injections.
    But, I was lucky enough to find a doctor that is just absolutely wonderful. And he now has me down to just one injection per day. Though it's a high dosage (lantus- the 24 hour insulin), and I have to watch what I eat, ever since he put me one it, and worked out the dosage I have done very well.
