Ramen Noodle slaw

    I had this for the 4th of July and loved it. I just wanted to share!




    RAMEN COLE SLAW

    1 lb. cole slaw mix
    2 pkgs. Ramen noodles (chicken flavored soup), uncooked, crushed
    1/2 pkg. shredded carrots
    1 cup sliced almonds
    1/4 c. sunflower seeds (opt.)
    3 green onions, chopped

    DRESSING:

    1/2 c. sugar
    3/4 c. peanut oil
    1/2 c. cider vinegar
    2 seasoning packets from noodles

    Mix dressing ingredients. Pour over cole slaw and carrots and onions. Chill this mixture overnight. Toast almonds until slightly browned. Cool. Just before serving add crushed, uncooked Ramen noodles & almonds and sunflower seeds (opt.)

    I've had this too with chicken added to make it a meal, YUM. I am pretty sure it's "Diabetic" friendly.

    Wow, this is too cool...we love this recipe and make it all the time! The only difference is that I use Beef flavored ramen...this is one of my most favorite summer foods!!!

    Crunchy Cole Slaw

    Dressing – mix and set aside in fridge till ready to use

    1 Cup Veg Oil
    1/3 cup cider vinegar
    1/3 sugar
    2 packets of the seasoning mix from 2 Ramen Oriental Noodle Soup Mixes
    (yes the one for soup) – save the noodles for later.

    Dry ingredients – mix and set aside till JUST ready to serve.
    1/3 cup sunflower seeds
    1 cup sliced almonds
    all the noodles from the soup mix – crushed- but not cooked


    The Salad -

    1 bunch scallions chopped
    1 lb Broccoli Cole Slaw (pre packaged) you may need 2 or 3 small pkgs to make up a pound

    NOTE: I have never been able to find the packages (when I needed them) In the grocery store. I usually chop some broccoli, add some shredded cabbage
    and Shredded lettuce.


    TO ASSEMBLE:


    JUST before serving, put the veggies in a big bowl, add the dry ingredients and then toss With all the dressing. – SERVE!

    This is INSANE! I came to this board to specifically ask for this recipe!! My neighbors gave it to me once and I didn't have the heart to tell them I lost it!!
