Jan ADRs...Too Much? Advice Appreciated

We've already got a trip in December with the DDP, so on that trip we're doing light breakfast (snacks), CS for lunch, and 1 TS credit restaurants for dinner. There are a few variations, but that's pretty much the plan. For our January trip, we want to try completely different restaurants in the 1 and 2 TS categories (with the exception of Le Cellier). Just FYI, in December we've got ADRs for: Les Chefs de France, Sci-Fi (lunch), Boma, Biergarten, Rose & Crown, Le Cellier, Raglan Road, Coral Reef, Teppan Edo, Tutto Italia, Akershus, Via Napoli (lunch), and Cape May (breakfast). We might cancel Via Napoli, but the rest are set.

The January plan is a late breakfast/early lunch at a 1 TS restaurant, and dinner at a 2 TS restaurant. We're either going to do the DxDP or TIW...that's still something we're debating. We don't plan on getting to the parks early in the morning, and we are going to try to just take it easy. We'll be staying at POR. We land on 1/25 around 3:30 in the afternoon, and we leave late on 2/1. We still haven't figured out our 1 TS restaurant for the evening we get in, but we've been thinking about Boatwright's, just for the convenience.

January ADRs are as-follows:

Hollywood Brown Derby - Lunch at 11:40am
California Grill - Dinner at 7:40pm

1/27
Boma - Breakfast at 9:45am
Jiko - Dinner at 7:10pm

1/28
1900 PF - Breakfast at 10:05am
Narcoossee's - Dinner at 7:20pm

1/29
Kona Cafe - Breakfast at 9:45am
Flying Fish - Dinner at 6:00pm

1/30
Chef Mickey's - Breakfast at 9:35am
CRT - Dinner at 7:10pm

1/31
Le Cellier - Lunch at 11:30am
Citrico's - Dinner at 9:15pm

2/1
O'hana - Breakfast at 9:45am

So, are we crazy to try all these restaurants in one trip? Also, I am a little indecisive about Flying Fish. DH isn't much of a seafood person, and I've seen mixed reviews about service. Would there be a better 2 TS choice?
