I am big on surprises as I have freaked my wife out several times.
You can do many things since your mother knows (as of now) that you are going to be changing hotels anyway. So, here we go! Make sure to leave your mother in the room and take all of your luggage down to the bellhop station yourself, that way you can tell them where to transfer it too. Then check out because the person at the front desk will probably see your next reservation on the screen. Then finally go back to room and get your mother and go to the park of choice for the day. Believe it or not, that is the hardest part....not having them find out from a CM somewhere.
You can do a pre-check in any time and they will text you when your new room is ready and you can go straight there. If it is before your lunch, then I would take your mom back to Jambo after lunch and walk around the public animal viewing areas. When you come back through the lobby, take your mom to the gift shop and maybe go purchase some postcards or something to remember the trip for....then give them to her when you exit and tell her you want her to remember her stay here!
I don't know if your mother drinks, but there is a wonderful lounge as well as a pool side bar where you could also break the news to her. She is one lucky mom. Put your own spin on it.
The fact that you have the lunch at Sanaa already gives you carte blanche to dress it up however you like. You could just by chance stumble down a hallway and open the roomdoor with your magic band......you could stick around and listen to some of the storytelling just off the lobby and then tell her you are too tired to go anyplace else...we are staying here....Take advantage of all the Deluxe has to offer. Go to breakfast at Boma...

One thing I did on my big surprise trip was I had all my individual plans put into cards to my wife. The first was in an anniversary card while we were sleeping in a hotel in Bangor Maine. Wake up call at 4:00 in the morning. I gave her a card that said Get UP, the Disney plane leaves in an hour and a half (she thought we had another week touring the east coast). The next one I gave her on the plane that said I requested her presence at supper in the CG that night. At supper I gave her one that said tomorrow we would be moving to WL.
Just go with whatever you feel would make your mom smile!
