We went to Port Canaveral for the weekend and found a few fun things to do.
Exploration Tower it cost $6.50 per person. We spent a little over an hour there. Just my husband and me, no kids. It had a area about the space program, the port area, and a history of cruising. There is a coupon online for a $1.00 good till June 30th :

This is in the same area at Grills and Fish Lips.
There is a great view of the port area. The Dream is in port today 3/9
Grills is to the far right, Fish Lips in the middle (green building with red roof).
There is also a simulator.
They show a movie on the history of Port Canaveral. It's about 20 minutes long. The theater is cool screens come down and cover the windows.
Cool artwork. It's all made from plastic to highlight saving the ocean.
Then we went a few miles down the road to the new boat ramp area.
Fishermen and lots of pelicans. The pelicans hang out waiting for a handout.
