FP+ trying to understand....

This one has probably been asked over and over, but my searches return so many very very long threads I decided to ask again:

If I hold 3 prebooked FP+ for DHS : TSMM, ToT and Star Tours, I cannot get anymore in-park FP+'s until I have used all 3 of the prebooked FP's, right? If so, then my planned strategy of booking FP's for later in the day when lines may be longer sort of shoots us in the foot for getting any extra FP's throughout the day.

Yes that's right.

So there is a trade-off between booking the FPs earlier in the day (which gives you the opportunity to book more when you are done) vs mid-afternoon or evening (when the SB queues are longest and the FPs are most needed).
