Eat at Home 3!

Still planning next week, but have the 1st few days...
Sunday - 3 Cheese and Spinach Stuffed Shells (Aldi's deal) in fresh tomato sauce with Beef Meatballs and Caesar Salad - low work for me so I can watch NFL playoffs:)
Monday - Chicken Fajitas, Fresh Diced Mango
Tuesday - 2nd Chicken Dinner - Mexican is popular here, so I may do Chicken Soft Tacos, Refried Beans, and Raspberries
Wednesday (or Thursday) - Thinking of making a large turkey breast or ham dinner to get it out of my freezer - whichever I choose will be the makings of both Wednesday, Thursday, and Friday dinner. I will make sides of mashed potatoes, mashed sweet potatoes, cranberry orange bread, stuffing, and some fruits/veggies (still to buy - ham would probably be fresh pineapple, clementines, beans, and turkey would be apples, spinach salad, berries) over these days, depending what the family picks (we'd do the meat the same twice, but change all the sides - 3rd dinner would be TBD based on how much meat is left and what sides are left, but some form of soup/stew likely)...
Saturday - Out

Okay, turkey breast was picked and preferred for early in the week, so Mon/Tues plans are Thurs/Fri plans and Mon-Wed look like this...
Mon - Roasted turkey breast, mashed potatoes, gravy, green bean casserole, cranberry sauce
Tues - Leftover turkey, mashed sweet potatoes, stuffing, raspberries, leftover gravy
Wed - Thanksgiving soup - turkey, turkey broth, and leftovers (with some sauteed onion and carrot) - should be pretty good:)...

Saturday - shrimp creole over rice
Sunday- turkey, roasted potatoes, broccoli
Monday - turkey avocado sandwiches, cucumber salad
Tuesday chili and cornbread
Wednesday - leftovers
Thursday- pulled pork, pinto beans, okra, cornbread
Friday - tacos, corn on the cob, black bean -avocado - red pepper salad
 
Menu-Week of Jan 10th

Sunday- Roast whole chicken, roast sweet potato, steamed broccoli/cauliflower/carrot mix, homemade bread
Monday- Wonton Soup and Salad
Tuesday-Whole wheat pasta w/bolognese sauce (ground chicken)
Wednesday- Wraps (chicken, cheese veggies)
Thursday-Breakfast for dinner (veggie omelette for me, fried eggs for ds, pineapple, toast)
Friday- Baked Sole w/lemon pepper, couscous with mushrooms , and steamed veggies
Saturday- Homemade pizza
Sunday- Not sure as Dh and Ds are at an event
 
So my meal plan is going to be a little crazy as my daughter is now a vegetarian and hubby and I are on a healthy eating plan due to health reasons. Next week I will plan meals better so I don't have to make 3 different meals.

Saturday - Turkey and noodles, green beans
Sunday - Spaghetti and meatballs
Monday - Hamburgers/Grilled cheese, fries, fruit and salad or fruit smoothie for adults
Tuesday - Chicken Fajitas/Cheese Quesidilla, fruit salad
Wednesday - Roast with potatoes and carrots
Thursday - Waffles and bacon for kids, egg white omelet for adults
Friday - Home made Pizza for kids, salad for adults
 


The plan is to clean out the fridge/pantry for next week!

Monday: H has a dinner conference. I will be having frozen waffles we have in the freezer.
Tuesday: Cheesy vegetarian chili mac http://www.budgetbytes.com/2016/01/cheesy-vegetarian-chili-mac/
Wednesday: I have my workout class. Leftovers.
Thursday: Rotini pasta, meat sauce, cheesy biscuits
Friday: Chicken breast marinated in Caesar dressing and baked, brown rice, carrots and ranch
Saturday: My inlaws will be at their FL house. Going there for dinner (we cook, not sure what's on the menu)
Sunday: Red bean and rice burritos, chips, salsa and guac.
 
This week will be chickpea curry with basmati rice, ginger carrot soup and rolls, shepard's pie, taco soup and homemade pizzas.

I'm making funfetti cupcakes for a sweet treat using cool-whip mixed with vanilla pudding for the frosting.

Fri - Out (Date night with mom sitting - we have dinner and a play)
Sat - TBD - Gonna ask my mom what she wants and make it - probably steak and baked potatoes with carmelized onion and a green salad

I am so far behind on posting my menus. Between my job and being sick, all I seem to do is work and sleep. So, here is what this week looks like and when I get home tonight I will post the next couple of weeks.

Canceled Mom's visit and date night (and looking to be stuck all weekend) and don't have as many leftovers as I want for today...so the rest of the week will be...
Wed - Homemade Butternut Squash Soup (on my stove and tastes excellent - went with roasting it and adding coconut milk, a little regular milk, water, salt, vanilla, cinnamon, honey, and lots of black pepper - it's really good for a thrown together soup:) with BLTs (moving meal up) and strawberries
Thurs - Veal and Peppers Sandwiches (1st time making this, but got veal and multicolor peppers on a great sale), rest of soup, blueberries
Fri - Frozen pizza, chopped mangoes, smoothies (orange julius-type)
Sat - Grocery store prepped meal (getting Friday morning), green salad, blackberries and bananas
Sun - Chicken Pesto pasta, green salad, clementines

I just read 30 pages of this thread and I am now starving. :)

I am trying to not eat out because I can cook so much cheaper. Plus it is gymnastics meet season and we have travel expenses.

Monday - we were at a meet.
Tuesday - I got apple, raisin, and almond stuffed chicken breast at kroger for $1.80 pp! The pack was like $3.50. I also made Cajun rice, and corn on the cob.
Wednesday - 10 bean Cajun soup and cornbread muffins
Thursday - Black bean dip, and taco salad on spinach
Friday - something gumbo or creole. I will have leftover black beans (I am crock potting them), half of a polish sausage in the freezer, frozen peppers, and shrimp. I will wing it.
Saturday - home made Alfredo and home made pasta. I am going to try to make pasta for the first time. Hubs hobby is bread making and we are overrun with flour. I will add either a cold spinach salad or cook it some way.
Sunday - I am trying to use up all our canned tomatoes (so I can pack away all my mason jars), frozen peppers, and fresh carrots so I will make crock pot spaghetti.
 
Okay... made some big changes already as my grocery list was getting out of hand with my original plan!

Lunches will be salads for week one (utilizing some leftovers)... I am still trying to figure out what to do for week 2 besides leftovers as I need those for the dinners!

The beginning of the year I made a list of everything in my pantry, cupboards, freezer and chest freezer and made a 6 week meal plan.. We have done very well eating from what we have.. we do purchase from the outskirts of the stores (produce, milk, eggs etc.)

My plan looks like this for the next few weeks which is the end of my plan. Lunches will be leftover Chinese for the week along with a few hot pockets or leftover and breakfast will be eggs/oatmeal
