When do cruise prices tend to go up? After the 75 days?

Cruise prices go up as pricing tiers in each category sell out. If the rooms don't sell, the price will stay the same or possibly go down.
Usually the opposite. Cruise pricing is generally done in tiers - when X number of staterooms have sold the price goes up, and again and again, etc. With a PIF date at 75 days, that's when some will cancel and depending on how full the cruise is there may be some really good last minute deals offered after the 75 day mark.
Does that mean 75 days after opening prices?
When a cruise opens up for booking, that's when the price is generally the lowest it's going to be. As the rooms within each category start filling, at certain points, the prices will rise. Sometimes those price raising points are reached quickly (like our WBPC in 2008) and prices start rising within a day. Most times the rise is slower, but rise it will. Until somewhere in the 60-75 days out from the cruise mark. At that time DCL determines whether they've sold enough rooms, and, if not, offer specials to fill the rooms. These specials, while lower than the current pricing, are usually higher than opening day pricing.
Definitely depends on the cruise, though. The *GT rates for the WBPC had lots of opening day bookings being cancelled and rebooked for thousands of dollars less, and in higher categories.
It used to be that the lowest prices were always on opening day, and went up as the ship filled.
This is still sort of true. The issue is that on most cruises, the ships aren't filling. SO, DCL is offering all kinds of specials to fill the ships--Kids Sail Free, Military rates, FL res rates, *GT rates, etc are available on many cruise dates. These typically come out right after the penalty date for the cruise (although they are sometimes added sooner).
If you are flexible on dates, the time to look for specials is right after the penalty date (about 74 days before cruise starts on most cruises).
Above is right--the Panama crossing came out with great *GT rates just a few days after the penalty period started. I honestly think DCL dropped the ball on that one--it is impossible to cruise both the PC and the TA because they overlap. Bad scheduling.
